As a kid, taco dip in all its forms was a regular feature at parties. I’m not sure why—maybe Martha Stewart, the Today Show, or whatever made it popular. Who knows? Anyway, this seven-layer taco dip is an homage to simpler days when our parents got their recipes from cookbooks and magazines, not TikTok and Instagram.

This seven-layer taco dip is all about layers, hence the name! The refried beans, creamy guacamole, and sour cream mixed with taco seasoning give the dip a hearty, flavorful base. It’s topped with shredded cheddar cheese, chopped tomatoes, black olives, and green onions, so there’s no way you can accuse this dip of being bland. It’s tangy, creamy, and crunchy. What more could you ask for in a dip? Sure, the ingredient list is long, but I’m telling you, people, you’ll have this recipe whipped up in no time.

Is 7-Layer Taco Dip Healthy?

I’m happy to say that seven-layer taco dip is delicious and nutritious. Sure, there’s a decent amount of fat from the sour cream and cheese, but that means you’re also getting calcium, vitamins, and probiotics. Plus, refried beans are loaded with fiber. And it’s pretty easy to make the dip even healthier using low-fat sour cream or Greek yogurt. Switching to homemade guacamole ensures there are no added salts, preservatives, or sugars. You might also consider using black beans or using lard-free refried beans. Even with all these mods, your taco dip will still be delish!

Refried Beans: Pinto or Black?

When making a seven-layer taco dip, the choice between pinto and black beans can significantly impact the flavor and texture of the dish. I wouldn’t say one is better, but it’s nice to know the difference!

Pinto refried beans are the more traditional pick. They’re used in a lot of Mexican dishes and have a creamy texture with a slightly nutty, earthy flavor. I’ve found that pinto refried beans spread smoothly and complement everything from dips to burritos. 

In contrast, black refried beans feel thicker and have a chewy texture, but not in a bad way. For whatever reason, black beans seem to have a denser skin, even when they’re refried. They also bring a vibrant color to the dip that looks really nice with the rest of the layers. 

Honestly, both types of beans are nutritious and can be used interchangeably based on what you want. If you want a creamier, more traditional taste, go with pinto beans. For a heartier texture and richer flavor, black beans are a worthy choice. Experiment with both to find your fave!

How To Make Ahead And Store

You can prepare each layer separately and assemble it just before serving to keep the ingredients fresh. Keep in mind that guacamole browns quickly, so I wouldn’t make that layer until you’re ready to serve the dip. Regarding leftovers, store them in an airtight container in the fridge for up to 3 days

Serving Suggestions

This seven-layer taco dip absolutely needs to be served with Tortilla Chips, Homemade Potato Chips, or Blanched Broccoli if you’re feeling healthy. It pairs well with other Mexican-inspired dishes like Healthy Chicken Quesadillas or Mushroom Tacos. For drinks, consider serving The Best Classic Margarita or a cool glass of Wine Spritzer to complement the dip’s flavor.

Ingredients

  • 2 cups refried beans
  • 2 cups guacamole
  • 1 1/2 cups sour cream
  • 1 tablespoon taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup chopped tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onions

Instructions

  • Spread the refried beans in an even layer in a large serving dish.

  • Layer the guacamole evenly over the beans.

  • Mix the sour cream with taco seasoning and spread over the guacamole.
  • Sprinkle shredded cheddar cheese over the sour cream layer.
