  • Eggless French Toast

We’ve all been there… we wake up one morning with a hankering for French toast, but we go into our kitchen only to find that there are no eggs. If you’re in this sticky situation, don’t worry. This eggless French toast recipe has your back.

In just 20 minutes, you can make a fabulous French toast without any eggs at all. The magic is in the batter: a basic mix of milk, sugar, cornstarch, vanilla, and cinnamon. Cornstarch acts as a thickener and brings the bread to golden brown perfection. It’s so good, nobody will miss the eggs.

I appreciate this recipe because it’s only one substitute away from being vegan, assuming you use the suggested plant-based milk. If you use vegan butter (or coconut oil), then you’ve got a mouthwatering brunch without any animal products. So it’s not just scrumptious; it can also be quite accommodating!

Is Eggless French Toast Healthy?

Without eggs, French toast loses a bit of protein and becomes mostly carbs and sugar. However, there are some ways you can adjust the recipe to suit a healthier diet. For example, you can use whole wheat or sourdough bread instead of plain white bread. Gluten-free bread options that have tapioca starch are also great for French toast. To increase protein while staying plant-based, simply slather your slice of French toast with almond butter and call it a day.

Choosing The Best Bread

My best friend’s favorite way of enjoying eggless French toast is with Texas toast—the thickest cut of bread there is. The result is a fluffy, scrumptious block of bread that soaks up all the yummy flavors and glistens golden brown. Thicker bread also means the toast will be less likely to fall apart. Whether you pick white bread, whole wheat, cinnamon swirl, or sourdough, thick slices are the way to go for a firm and flavorful French toast.

INGREDIENTS

  • 3/4 cup almond milk or any preferred milk
  • 1 teaspoon granulated sugar
  • 2 tablespoons cornstarch
  • 1 1/4 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 4 slices of thick bread
  • Unsalted butter, as needed
  • Maple syrup and fresh fruit for serving

How To Make Ahead And Store

While eggless French toast is best served fresh, the benefit of it not having eggs is it lasts longer than French toast made with eggs. Store covered in the fridge for up to 4 days, or freeze for 1-2 months. Thaw in the fridge overnight and reheat in the oven at 350°F for 10-15 minutes.

Serving Suggestions

Serve this fancy eggless French toast with Pumpkin Pie Overnight Oats or Breakfast Quinoa for a decadent brunch buffet. Meat-eaters will enjoy this dish with a side of Twisted Bacon or Air-Fryer Breakfast Sausage. A little salty balances out the sweet!

Top your toast with Strawberry Chia Jam or Protein Granola, and you’ve got a great breakfast to start your day off right.
