What if fries could be healthy? Even better, what if those healthy fries could be ready to eat in about 20 minutes? Good news, fry lovers—this recipe is, in fact, quick, easy, and super healthy.

The air fryer is a multi-use workhorse in the kitchen, and it’s particularly useful when the craving for fries strikes—but you aren’t necessarily craving all the oil that usually goes into deep frying them. These sweet potato fries only require the quick prep work of peeling and cutting them into sticks before getting a light coating of olive oil and cornstarch and being tossed in the air fryer. Using sweet potatoes instead of regular potatoes offers a touch of natural sweetness and additional nutrients beyond what the plain spud—the very distant cousin of the sweet potato—can offer. So set your air fryer to preheat, and get ready to make a super simple side dish that only needs four ingredients!

Are Air-Fryer Sweet Potato Fries Healthy?

Some call sweet potatoes a superfood, and I’m totally inclined to agree. Sweet potatoes are loaded with beta-carotene, which is converted into vitamin A in the body to support healthy vision and skin. They’re also packed with fiber, vitamin C, vitamin B6, potassium, manganese, copper, and a whole host of other nutrients that can benefit everything from brain health to immune function. You definitely have good reason to be adding more sweet potatoes to your diet!

The Cornstarch Is Crucial

If you’ve ever struggled to get your homemade sweet potato fries crispy without dunking them in the deep fryer, that’s where this key ingredient comes in. Giving the fries a light dusting of cornstarch (or tapioca starch) helps to absorb the excess moisture from the sweet potatoes. This is so important in helping to create a crisp texture when cooked in the air fryer.

If you skip this step, you’ll see the difference—and not for the better. Without the cornstarch, your sweet potatoes can turn out soggy and unevenly cooked. Naturally, you’re striving for golden brown, crisp on the outside, and perfectly tender on the inside, so take my word for it and stick with this easy trick.

How To Make Ahead And Store

If you don’t finish all these crispy, delicious fries, fear not! Place them in an airtight container or a resealable plastic bag and keep them in the fridge for up to 3-4 days. For the best results when reheating, use the air fryer at 350 degrees Fahrenheit for about 3-5 minutes to restore their crispiness.

Serving Suggestions

I don’t know about you, but when I think fries, I think dipping sauce. There are so many ways to jazz these up, but I’m a big fan of the avocado ranch from these Cheesy Buffalo Chicken Potato Poppers or the creamy avocado dip that goes with these Vegan Buffalo Patties. Some Honey Mustard, Horseradish Sauce, or a tangy Remoulade would all hit the spot, too!

Air-Fryer Sweet Potato Fries

Ingredients

  • 1/2 pound sweet potato, cut into 1/4 inch strips
  • 1 teaspoon olive oil
  • 1/2 teaspoon cornstarch (or tapioca starch)
  • Salt to taste

Instructions

  • Preheat your air fryer to 400 degrees Fahrenheit.
  • In a large bowl, toss the potato strips with the oil. Then, add the cornstarch and toss until it is absorbed.

  • Spread the fries in one layer in the mesh basket of the air fryer, making sure there is space between each fry. You might need to do two batches. Sprinkle with salt.
  • Cook until golden brown and crispy, about 15-20 mins. Then serve and enjoy!
