Bright and zesty protein-packed waffles with Greek yogurt and blueberries.

Weekends are already great on their own, but how incredible are weekends when you get to wake up late and throw together waffles for breakfast? Those weekends are even better!
These blueberry gluten-free Greek yogurt waffles are a bright, colorful, and protein-packed way to start your day, and a sprinkle of bee pollen makes them feel so bougie. With bold blueberry tang, zesty lemon zing, and a fluffy-yet-crispy waffle experience that caters to gluten-free eaters without sacrificing flavor, the waffle game doesn’t get any better than this!
Whether you’re whipping these waffles up for a lazy weekend brunch or a weekday treat, this recipe is here to upgrade your mornings. The best part? They’re a breeze to make! With just a handful of ingredients, and prep time finished in five minutes, you’ll have delicious waffles so fast that you’ll forget they’re healthy (yes, really).
Top your waffles with extra yogurt, fresh blueberries, a drizzle of honey, and a pinch of bee pollen for the ultimate Instagram-worthy breakfast that actually tastes as good as it looks.

Are Blueberry Gluten-Free Greek Yogurt Waffles Healthy?
You bet! These waffles pack a punch of protein, fiber, and essential nutrients, thanks to the oat flour, low-fat Greek yogurt, and fresh blueberries. Low-fat Greek yogurt is a superstar, delivering creamy texture while being lower in fat and higher in protein than regular yogurt. Honey provides natural sweetness, and a pinch of lemon zest brings brightness without added calories.
Want to make these waffles even healthier? Swap out the honey for a sugar-free sweetener, or use non-dairy yogurt to make the recipe dairy-free. Add some chia seeds to the batter for an omega-3 boost, or substitute half the cornstarch with almond flour for extra fiber.
Why Greek Yogurt?
Because it does everything. Greek yogurt keeps the batter light and moist, creates waffles with the perfect balance of crispiness and fluffiness, and adds a tangy depth that pairs beautifully with blueberries and lemon. It’s also super accessible; most grocery stores carry a variety of Greek yogurt options, so you can easily find a brand you love.
Beyond taste and texture, Greek yogurt is a no-fuss ingredient. No need to deal with melting butter or heavy cream; just grab your tub and go. It also doubles as a topping, making your breakfast both streamlined and indulgent. Practicality, flavor, and health benefits all in one? That’s a breakfast win.

How To Make Ahead And Store
To store, let the waffles cool completely. Place them in an airtight container in the refrigerator for up to 3 days or freeze them in a single layer before transferring to a freezer-safe bag for up to 3 months. Reheat from frozen in a toaster or in the oven for best results.
Serving Suggestions
Nothing feels better than being able to pull together meals that are delicious and tasty without compromising your dietary needs! To make the gluten-free brunch spread of your dreams, I recommend serving these waffles with plenty of Strawberry Whipped Cream and a Fruit Salad or this Watermelon Fruit Salad for topping.
For savory options alongside these waffles, I love to make an Easy Omelette or two and serve them with Sweet Potato Hash Browns, some Air-Fryer Turkey Bacon, and some Air-Fryer Breakfast Sausage.
