Blueberry Gluten-Free Greek Yogurt Waffles

Ingredients

  • 3 tablespoons oat flour (20 grams) gluten-free if needed
  • 3 tablespoons cornstarch (24 grams)
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1/4 cup blueberry flavored low-fat Greek yogurt plus additional for topping
  • 1 large egg
  • 1/2 tablespoon freshly squeezed lemon juice
  • 1 teaspoon honey plus additional for topping
  • 1/2 teaspoon lemon zest (about 1 whole) packed
  • Fresh blueberries for topping
  • Bee pollen for topping (optional)

Instructions

  • Preheat waffle iron on the highest setting.
  • In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt. Set aside.
  • In another medium bowl, whisk together the yogurt, egg, lemon juice, honey, and lemon zest. Add in the dry ingredients and whisk until fully combined.
  • Spray the two sides of the waffle iron with cooking spray, then pour half the batter into the iron (roughly a heaping 1/2 cup) and close the waffle iron.
  • Cook until the waffle iron stops steaming and the waffles begin to release from the iron with a golden brown crust, or if you want your waffles EXTRA crispy, you can cook them for 2 cycles of the waffle iron.
  • Top with the rest of the yogurt, blueberries, bee pollen (optional) and a drizzle of honey.
