Cottage cheese is taking a turn in the spotlight these days, thanks to the fat-to-protein ratio that makes it a powerhouse for those seeking a healthier lifestyle. While you might not necessarily think of cottage cheese in a sweet breakfast, trust us when we say these protein waffles are worth a shot. Waffles are often thought of as the drier sibling to pancakes or French toast. While traditional waffles do sometimes have a drier texture, the cottage cheese in this recipe leaves you with waffles that are creamy, fluffy, and perfectly crispy around the edges.

While they work well as a traditional breakfast waffle, they’re also an excellent option when you want to go savory. Try them with almond butter, layered with berries, and topped with a handful of salted, roasted nuts. Drizzle with pure maple syrup if you want just a touch of added sweetness, and you’ll have a breakfast treat that’ll satisfy your taste buds—and your hunger. Or, for added protein, try using these in place of an English muffin. Make up a batch of scrambled eggs and bacon, and layer in between two protein waffles for a fun (and filling!) take on a breakfast sandwich.

The cottage cheese is a heavier addition in comparison to a more traditional waffle recipe, so a little goes a long way when it comes to serving up these waffles. If you double or even triple the recipe, these will feed a family gathering. Better yet, make them ahead of time and pop them in the freezer for an easy weekday breakfast that’ll have you easily hitting your protein goals with little effort.

Are These Protein Waffles Healthy?

These satiating waffles contain cottage cheese, butter, and eggs (and a few other key ingredients), making them a bit more dense than other options. But they’re not unhealthy. In fact, they contain oat flour for added fiber without the gluten, almond milk for a light and silky texture without a ton of added calories or saturated fat, and whey protein powder for an added punch of protein. If you’re adding a large amount of syrup and butter on top, they may not be the healthiest, but provided you serve them with a variety of berries, some plain yogurt, and a drizzle of maple syrup, you’ll have a healthy, protein-packed breakfast that feels like a treat and leaves you satisfied.

How To Include Waffles In A Brunch

A solid brunch needs to have a variety of food options. This is especially true if you’re hosting brunch for a larger gathering of friends. You want to make sure that you’re hitting both sweet and savory food choices. If you want to serve these protein waffles for brunch, we recommend including a variety of other foods as well. You don’t need to keep it traditional here (and in fact, it’s better if you don’t). A good brunch will include a mix of vegetable dishes, a few options for meats, and a variety of breakfast staples such as toast and eggs, pancakes and waffles, and a few fun drink options just to mix things up.

Can I Prep This Ahead?

If you want to make these ahead of time, these are an excellent option for breakfast meal prepping. Once waffles have cooled, store stacked between wax paper and then wrapped well in plastic wrap, tin foil, or an airtight, fridge (or freezer) safe container. In the fridge, they’ll last up to 3 days. In the freezer, they’ll last for up to 3 months.

Serving Suggestions

Part of the fun of waffles is how many different ways you can top them. If you want to go sweet and decadent, you can try Chocolate Whipped Cream alongside your favorite berries. You can also try this divine Dairy-Free Vegan Caramel Sauce, or simply top with your favorite homemade yogurt and drizzle with maple syrup for a traditional waffle breakfast. If smearing with nut butter is more your thing, we recommend trying this fan-favorite Oatmeal Cookie Granola Butter or Cookie Dough Almond Butter.

Ingredients

  • 1/2 cup full-fat cottage cheese
  • 1 large egg
  • 1 tablespoon unsalted butter melted
  • 5 tablespoons unsweetened vanilla almond milk
  • 1/2 cup oat flour (54 grams)
  • 1/4 cup vanilla whey protein powder (20 grams)
  • 1/4 teaspoon baking powder
  • Pinch of salt

Instructions

  • Spray your waffle maker with cooking spray and heat on the highest setting.    
  • In a large bowl, whisk the cottage cheese, egg, butter, and milk until mixed.  
  • In a separate bowl, whisk the oat flour, protein, baking powder, and salt.
  • Add the dry ingredients into the wet ingredients and stir until combined.
  • Fill a lightly heaping 2/3 cup measuring cup with the batter and pour onto the griddle, spreading out slightly. Cook until desired level of crispiness has been achieved. I like mine at 2 cycles of the waffle maker.
  • If your batter has absorbed some of the moisture, add 1 tablespoon of milk and whisk before making the other waffle.  
  • Top as desired and DEVOUR!
