Protein Cauliflower Oats With Sautéed Strawberries

Ingredients
1teaspooncoconut oil
1/3cupstrawberriessliced
1/2cuprolled oats
1pinchof cinnamon
1pinchof Steviaor sweetener of choice
1/2cupfrozen riced cauliflower
1 1/3cupswater
3tablespoonsprotein powderof choice
1tablespooncashew butteror any nut butter
Instructions
Melt the coconut oil in a medium-sized pan on medium-low heat. Add the strawberries and cook, stirring frequently, until soft and lightly brown (about 2 minutes). Set aside.
In a small pot, stir together the oats, cinnamon, and Stevia. Add in the riced cauliflower and water and stir.
Bring the oats and cauliflower mixture to a boil. Then, reduce heat to low and cook, stirring often, until your mixture is creamy with just a little water remaining. This should take about 5 minutes.
Transfer mixture to a bowl and stir in the protein powder, then top with the strawberries and nut butter.
