Protein Cauliflower Oats With Sautéed Strawberries

Topped with sautéed strawberries, these cauliflower oats make a protein-rich breakfast!

Ingredients

  • 1 teaspoon coconut oil
  • 1/3 cup strawberries sliced
  • 1/2 cup rolled oats
  • 1 pinch of cinnamon
  • 1 pinch of Stevia or sweetener of choice
  • 1/2 cup frozen riced cauliflower
  • 1 1/3 cups water
  • 3 tablespoons protein powder of choice
  • 1 tablespoon cashew butter or any nut butter

Instructions

  • Melt the coconut oil in a medium-sized pan on medium-low heat. Add the strawberries and cook, stirring frequently, until soft and lightly brown (about 2 minutes). Set aside.

  • In a small pot, stir together the oats, cinnamon, and Stevia. Add in the riced cauliflower and water and stir.
  • Bring the oats and cauliflower mixture to a boil. Then, reduce heat to low and cook, stirring often, until your mixture is creamy with just a little water remaining. This should take about 5 minutes.             
  • Transfer mixture to a bowl and stir in the protein powder, then top with the strawberries and nut butter.
  • Serve and enjoy!
