As a modern fusion of American and Japanese cuisine, avocado sushi has become one of the most coveted rolls on the menu. But did you know that it only takes 15 minutes to create at home? All you need is nori, cooked sushi rice, ripe avocados, sesame seeds, and some accompaniments like wasabi and ginger. The final product is a yummy homemade roll that can satisfy your sushi cravings. But guess what? This sushi roll doesn’t contain any fish. So my vegan friends can eat as much of this as they’d like. When I was on the vegan diet, avocado sushi was my go-to order at Japanese-American restaurants. That, plus a cup of hot sake, made a night well spent!

Buttery avocado rolls will melt in your mouth and go great with salty, sweet, and spicy sides. Plus, they’re a simple and easy base for all kinds of stellar sushi additions, like wasabi, pickled ginger, soy sauce, or even Sriracha Mayo. Is Avocado Sushi Roll Healthy?

Since avocado is rich in healthy fats, fiber, and vitamins, an avocado sushi roll is quite nutritious. With an added plant-based protein like Crispy and Healthy Baked Tofu, avocado sushi can be part of a nutritionally balanced meal. It’s also vegan and dairy-free. If you want a lower-carb rice, consider swapping in brown sushi rice instead of white sushi rice.

A History Of Avocado In Sushi

Avocado is not a traditional ingredient for Japanese sushi, however, it has become a hallmark of modern American-influenced sushi across the world. Avocado was first incorporated into sushi with the invention of the California roll, an American spin on the traditional sushi roll. Sometime around the 1960s, creamy avocado was chosen as an excellent complement to imitation crab. While some say the roll was invented in Los Angeles, others say it came from Vancouver, Canada. Since then, sushi chefs have continued to experiment with avocado in sushi, later creating this fresh and vegan-friendly avocado sushi roll, an easy and delectable dish for sushi lovers.

How Do I Store Leftovers?

Once assembled, avocado sushi can be stored in an airtight container and refrigerated for up to 2 days. When you’re ready to enjoy, eat it cold and fresh from the fridge. I don’t recommend freezing it because thawing might ruin the avocado.

Serving Suggestions

Avocado sushi rolls can be enjoyed next to other similar rolls, like Cucumber Roll and Spicy Kani Roll, if you want to include fish. Moving beyond sushi rolls, you can use any extra avocado and whip up a delicious Avocado Salad to enjoy before the main course. Keeping things veggie-forward, I love the flavors in Roasted Kabocha Squash and Cucumber Kimchi.

For some more protein-rich options, try avocado sushi roll next to Chicken Katsu or Air-Fryer Teriyaki Salmon. If you’re following a vegan diet, try this Healthy and Delicious Buddha Bowl for your main course. Basically, any of your favorite sushi or hibachi sides will be perfect with this dish.

Avocado Sushi Roll

Ingredients

  • 2 nori sheets
  • 2 1/2 cups sushi rice cooked, seasoned, and cooled to room temperature
  • 2 ripe avocados cut into 1/2-inch slices
  • 1 tablespoon roasted sesame seeds
  • Soy sauce for serving
  • Wasabi for serving
  • Pickled ginger for serving

Instructions

  • Place a nori sheet on a bamboo mat, spread a thin layer of sushi rice on the nori, leaving a small space at the top.
  • Flip the nori so the rice is facing down and place avocado slices in the center. Roll the sushi tightly using the bamboo mat.
  • Sprinkle the roll with roasted sesame seeds, then slice into 6 pieces using a wet knife. Serve with soy sauce, wasabi, and pickled ginger.
