All right, my fellow vegetarians, gather ’round … and behold! I give you a perfectly toasted breakfast sandwich made in the comfort of your own home. (No DoorDash or café trips required!) This avocado egg sandwich is incredibly easy to make—in just a few simple steps, you’ll get the exact kind of breakfast sandwich you would buy at a café but with way more ability to customize. Plus, you can add more veggies, spices, or even meat to make it the most mouthwatering egg sandwich ever.

This dish has become a staple at many coffee shops and diners, especially those that cater to vegetarians. But the brilliance of this recipe is that both veggie-lovers and meat-eaters alike can enjoy it. With delicious egg and avocado, gooey cheese, and golden brown toast, this is a breakfast sandwich that would also be satisfying for lunch!

Is This Avocado Egg Sandwich Healthy?

With the ingredients being good sources of protein, and fiber, this is one well-balanced breakfast! It’s a great way to start the day off on the right foot. While this recipe is vegetarian, it’s not suitable for vegans. However, it can easily be made dairy-free with the use of a plant-based cheese and a dairy-free butter alternative. You can also make it gluten-free by using gluten-free bread. I recommend the “Base Culture” brand, but you can also search for a local gluten-free bakery for fresh options.

The “Everything Bagel” Version

My favorite variation of this breakfast sandwich uses either everything bagel seasoning or actual everything bagels toasted to perfection. The combo of onion and garlic with poppy seeds and sesame seeds is iconically yummy. To make this version, either sprinkle the everything bagel seasoning onto the avocado slices or simply swap out the bread with an everything bagel.

If you don’t have everything bagel seasoning or bagels, you can sprinkle some onion and garlic powder onto your buttered toast instead. This lends some of the same flavors, inspiring you for the next time you make this with everything you need!

INGREDIENTS

  • 2 slices whole wheat bread
  • Unsalted butter, as needed
  • 1 ripe avocado, sliced
  • 1 tablespoon olive oil
  • 2 large eggs
  • Salt and pepper to taste
  • Red pepper flakes or hot sauce, optional
  • 1 slice cheddar cheese

INSTRUCTIONS

Prepare
Toast bread with butter, slice avocado.

Cook
Fry eggs with seasoning.

Assemble
Stack avocado, eggs, and cheese between bread.

Devour!

How to Make Ahead and Store

This avocado egg sandwich is best enjoyed fresh, but you can store leftovers in an airtight refrigerated container for up to 2 days. Keep in mind that the avocado will brown over time, so it’s best to eat it as soon as possible. I don’t recommend reheating it.

Serving Suggestions

Whether you go cooked or raw, there are many different side options that would pair well with this avocado egg sandwich. Serve your sammie with a side of Air-Fryer Breakfast Potatoes, Grilled Sweet Potatoes, or Spinach Salad.

But if you’re a meat-eater, and you’d like something ultra-filling, then try a side of Bacon-Wrapped Baked Potatoes or Air-Fryer Breakfast Sausage.

Ingredients

  • 2 slices whole wheat bread
  • Unsalted butter as needed
  • 1 ripe avocado sliced
  • 1 tablespoon olive oil
  • 2 large eggs
  • Salt and pepper to taste
  • Red pepper flakes or hot sauce optional
  • 1 slice cheddar cheese

Instructions

  • Spread butter and then toast the whole wheat bread slices until golden and crispy. Meanwhile, slice the avocado.
  • Heat olive oil in a skillet over medium heat. Crack eggs into the skillet and cook to your liking, either scrambled or fried. Season with salt and pepper.
  • Layer the sliced avocado on one slice of the toasted bread and optionally sprinkle with red pepper flakes or a dash of hot sauce.
  • Top with cooked eggs and cheese slice; cover with the other slice of bread. Press gently to secure the fillings.
