Who doesn’t love a good dip? Whether it’s a game-day snack or part of a mezze platter, dips are always a crowd-pleaser. Personally, I’m especially fond of mezze, and I’ve even been known to host mezze parties to kick off the weekend or celebrate special occasions—simply because it gives me the perfect excuse to serve an array of delicious dips.
This hot take on a traditional Greek fava is one creamy, dreamy, delicious dip. Its naturally earthy flavors blend together to create a versatile spread that is as tasty on crackers as it is on sandwiches (or anything else you can envision!). Not only that, but it’s incredibly easy to whip together, whether you’re satisfying a craving, hosting a mezze party, or creating a big fat Greek picnic!
One of the best aspects of this recipe is that the longer it sits, the more the flavors harmonize. This dip is almost like a lemony split pea soup in velvety sauce form, and it’s stunning with a warmed pita and fresh veggies for dipping.

While Greek fava dip is stellar on its own, there are many ways to kick it up a notch or give it a good twist that might inspire you.

When I make split pea dip, I like to add one teaspoon of cumin and one teaspoon of paprika. I also recommend caramelizing some white onions on a medium-heated skillet to stir in at the end; this smoky-sweet flavor is the perfect addition to an already smooth profile. Similarly, you could also sauté some red bell peppers as a garnish. My favorite garnishes are chopped onions and black olives, but you can experiment ’til you find what best tickles your taste buds.

In a fridge-safe container, this dip keeps well for up to 7 days, making it a great homemade condiment to have ready for meal prep. If the texture changes, once thawed, toss it in a blender and reblend. It can be served hot or cold.

Ingredients

  • 1 cup yellow split peas rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups water
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt to taste
  • Black pepper to taste
  • Chopped onions, capers, olive oil drizzle optional, as garnish

Instructions

  • Combine split peas, onion, garlic, and water in a large pot. Bring to a boil, then reduce heat to simmer.

  • Simmer for about 45 minutes, or until the split peas are very soft and the mixture has thickened.
