Air-fryer Hasselback potatoes are a fun way to serve baked potatoes. Believed to have originated in the 1950s at Hotel Hasselbacken in Sweden, they’re a cross between jacket potatoes and sautéed potatoes. My first taste of Hasselback potatoes was at a steakhouse in New York, where they were one of the special side dishes on the menu. Judging from the many diners I saw enjoying them, I knew I had to order them too. And boy, am I glad I did! Once you’ve tried them, you’ll never want to make potatoes any other way again. That’s how delicious they are.

You’re going to love the presentation of these potatoes, as well as their texture—crispy on the outside and creamy on the inside. When you serve them to your guests, everyone will be impressed with your chef’s skills! The great thing about this recipe is that it lends itself to so many lovely variations. They’re basically a blank canvas waiting for your own creative culinary touch!

Are Air-Fryer Hasselback Potatoes Healthy?

Potatoes are a good source of potassium and vitamin C. This recipe only uses a very small amount of fat, and not just any fat, but heart-healthy olive oil. As written, this recipe is quite healthy and suitable for most diets. Of course, that’s a different story if you top these potatoes with things like cheese and bacon!

Add A Dash Of Flavor

While delicious served as a side dish, these potatoes can easily become a satisfying meal with the right toppings. The classic loaded baked potato options—sour cream, chives, butter, bacon bits, cheddar cheese, or even chili—are always a hit. (Just a heads-up: You may want to leave your calorie counter in the drawer!)
A Southwestern-style potato could include black beans, corn, avocado, salsa, and a sprinkle of cotija cheese. A Mediterranean version might feature crumbled feta, sun-dried tomatoes, olives, and a drizzle of tzatziki.
The right seasonings will also make all the difference. We’ve kept things simple with garlic powder and smoked paprika, but you could also try dried dill, lemon-pepper, sage or thyme. You could even tuck garlic slivers and fresh herbs such as rosemary between the slices for a real flavor infusion.

How to Make Ahead and Store

These are best made and served immediately. However, leftovers can be stored in an airtight container in the fridge for 3-4 days. If freezing, wrap in freezer-safe foil, place in a resealable freezer bag, and store for up to 3 months. When reheating, thaw in the fridge. Bear in mind that the texture may be affected.

Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped for garnish (optional)

Instructions

  • Preheat the air fryer to 400°F.
  • Clean the potatoes and pat them dry. Make thin slices along each potato, stopping just before you cut through, so the slices stay connected at the bottom.

  • Brush the potatoes with olive oil, ensuring oil gets between the slices. Season with garlic powder, smoked paprika, salt, and pepper.

  • Place the potatoes in the air-fryer basket. Keep them apart to ensure even cooking. Cook for 30-40 minutes, or until the potatoes are crispy on the outside and tender on the inside.
