We all get the hankering to have dessert for breakfast once in a while. Luckily, there are surprisingly many ways to satisfy it. One of my favorites is brownie waffles—a chocolatey twist on classic waffles that can be served up in a variety of ways. Chocolate goes great with maple syrup, all kinds of fruit, and so much more! Personally, I prefer to eat chocolate with coffee because it seems to add a little pep to my step.

Brownie waffles are quick and easy, only taking 20 minutes to make. So if you’ve got a busy day ahead of you, no problem! They’re also fun for special occasions like birthdays, Easter, or Valentine’s Day. This year, I’ll make these for my mom on Mother’s Day, since she tends to go loco for cocoa. And hey, with this decadent recipe, who wouldn’t? Each bite is like a chocolatey piece of paradise.

However you choose to enjoy them, brownie waffles are a scrumptious way to start the day.

Is brownie waffle batter the same as brownie batter?

While brownie waffle batter and traditional brownie batter share many of the same ingredients, there are some important differences that create a distinct texture and flavor.

Many classic brownie recipes often use little or no leavening agent, resulting in a dense and chewy texture. In contrast, this brownie waffle recipe uses baking powder, which helps the waffles rise and become fluffier—perfect for the waffle iron. Another key difference is that the recipe includes milk in place of vegetable oil, which will also result in a lighter texture for the brownie waffles.

How do I store leftovers?

Once cooled to room temp, brownie waffles can be covered with plastic wrap or transferred to an airtight container. Refrigerate them for 2-3 days, preferably without maple syrup or any other fixings, so they don’t get soggy. Alternatively, you can put them in a freezer-safe container and freeze them for up to 4 months. If you go this route, I recommend wrapping them in plastic wrap as well to avoid freezer burn.
You can thaw the waffles overnight in the fridge, or reheat directly from frozen in a toaster, toaster oven, or regular oven at 300°F for 5–10 minutes until heated through and crisp. For a softer texture, you can microwave for 30–60 seconds, though they won’t be as crisp.

Serving suggestions

Serve your brownie waffles with some mixed berries and maple syrup. Or kick the cocoa level up a notch by topping them with Chocolate-Covered Strawberries, Chocolate-Covered Raspberries, or Chocolate-Covered Blueberries. Ingredients

  • 1/2 cup semi-sweet chocolate chips
  • 1 cup milk divided
  • 3 1/2 tablespoons melted butter
  • 1 1/4 teaspoons vanilla extract
  • 2 large eggs
  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 5 tablespoons unsweetened cocoa powder
  • 1/4 cup granulated sugar

Instructions

  • Preheat the waffle iron. In a microwave-safe bowl, mix chocolate chips with 1/2 cup milk. Microwave for 25 seconds, stir, and repeat until melted and smooth.
  • Add the remaining milk, melted butter, vanilla extract, and eggs to the melted chocolate. Whisk well until the mixture is smooth.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, unsweetened cocoa powder, and granulated sugar.
  • Add the wet ingredients to the bowl of dry ingredients. Stir gently until mixed, avoiding overmixing.
  • Lightly spray or brush your preheated waffle iron with oil or nonstick cooking spray. Spoon about 1/3 to 1/2 cup of batter into each section of the iron.
  • Close the waffle iron and cook for about 4-7 minutes or until the waffles are crisp on the outside and cooked through.
  • Serve warm with your favorite toppings if desired.
