We have a lot of great breakfast places in Milwaukee. From the corner greasy spoon to the more sophisticated brunch spots, there’s something for every palate and budget. Still, nothing quite beats the satisfaction of making a delicious breakfast at home—especially when you can whip up something quick like these air fryer potatoes. Plus, I get to stay in my jammies. 

Have you ever tried an air fryer? If not, you really should. I probably use this kitchen appliance as much as my stove. And my toaster? It’s collecting dust because, yes, air fryers make a mean slice of toast. Heck, I even make “grilled” cheese sandwiches with it. Needless to say, air fryers are equally excellent for breakfast potatoes. 

Typically, breakfast potatoes are a tad oily, but not these. With an air fryer, they taste just as crispy minus the grease. Oh, I like grease, don’t get me wrong. But I don’t miss it much these days because air fryers are a thing of magic. No pans. No excess oil. Just delicious ‘taters. 

I love uppity brunches just as much as the next cook, but I also appreciate a recipe that’s as easy as tossing ingredients into a basket. All you need is a handful of pantry staples, and you’ll have a side dish that goes with everything from eggs Benedict to avocado toast. Most importantly, the air fryer pretty much guarantees these potatoes come out crisp on the outside and fluffy on the inside.

Are air fryer breakfast potatoes healthy?

Definitely! These air fryer breakfast potatoes are way lighter than traditional fried potatoes. They’re made with very little oil—and olive oil at that. Olive oil is full of healthy fats and antioxidants. 

The potatoes are just as healthy, providing you with potassium, fiber, and good ol’ vitamin C. For a slightly healthier twist, you can swap the russet potatoes for sweet potatoes to increase the fiber and beta-carotene content. But honestly, this recipe stands well, just as it is!

Add your own flavor flair

I like to rotate my flavors with these air fryer breakfast potatoes. The standard spice rack flavors I use are totally fine, but don’t be bashful—feel free to mix things up. Want a little kick? Toss in some Cajun spices or even a chili seasoning! Prefer something herby? Garden fresh rosemary and thyme are two of my favorites. Craving Mediterranean flavors? A sprinkle of your favorite Greek seasoning, a squeeze of lemon, and some crumbled feta will give them that perfect tang. Really, any way you flavor them, these potatoes are going to be a hit!

How To Make Ahead And Store

I recommend enjoying air fryer potatoes fresh. While they do reheat fairly well, they’re never as good as when they’re right out of the air fryer. However, leftovers should last 3 days if you store them in your fridge using an airtight container. To reheat, just pop them back into the air fryer for only a few minutes until they regain their crispiness. If the potatoes are in there too long, they’ll overcook—you don’t want that!

Serving Suggestions

Air fryer breakfast potatoes are a fantastic breakfast or brunch spread. When I’m making these potatoes on a lazy Saturday morning, I simply serve them with scrambled eggs and turkey bacon. If I’m feeling ambitious, I’ll make a healthy vegetarian omelet for my wife and me. It’s simple, healthy, and I don’t have to worry about vultures, AKA my kids stealing a bite.  

If you plan on serving air fryer breakfast potatoes for brunch, add a few fancier mains to your menu. Breakfast cauliflower pizza and asparagus quiche are surefire hits. Balance it out with a couple of sweet dishes like coffee cake and healthy pumpkin muffins with cinnamon “sugar”.

Ingredients

  • 1 pound russet potatoes peeled
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 to 1 teaspoon salt depending how salty you like things
  • Pinch of pepper

Instructions

  • Cut the potatoes into 3/4 inch cubes and place onto a paper towel.
  • Use another paper towel to blot the potatoes and get as much moisture off as you can.
  • Toss the potatoes with the oil, and then the rest of the seasoning.
  • Place into the basket of your air fryer and cook at 400°F for 10 minutes. Then, shake and cook another 5-7 minutes until golden brown and crispy
