When was the first time you went out for brunch and realized the scrambled eggs were made differently than your scrambled eggs at home? So, what makes them soft? Soft scrambled eggs don’t have a secret ingredient; it’s all in the technique. The heat needs to be on low because the eggs need to cook slower than usual. Typically, for me, scrambled eggs were a quick and easy hot breakfast I could make with little fuss. But then I realized that, with just a few more minutes, I could indulge in a hot breakfast with a luxurious creamy texture. It was like rediscovering a favorite meal!

Are These Soft Scrambled Eggs Healthy?

Eggs are healthy. They contain lots of protein and healthy fats and are low in saturated fats. The other ingredients in this recipe—salted butter and sea salt—are high in saturated fat and sodium, respectively. But the amount of butter in these eggs isn’t outrageous, so the overall saturated fat content per serving is fairly low. This recipe is suitable for low-carb or keto diets, vegetarians, gluten-free eaters, and Paleo diets (if clarified/ghee butter is used).

The most important technique in soft scrambled eggs is cooking them over low heat, which keeps them from burning, browning, or turning into tough, eggy rubber. But lots of chefs agree that there’s another element to making perfectly soft eggs: salt. Specifically, salt before cooking.

When you salt your eggs before you start cooking them, the salt helps break down the egg proteins, preventing them from bonding too tightly when cooked. This results in cooked eggs that are more moist and tender than unsalted eggs, or eggs that are salted after cooking.

Reheat in the microwave when you’re ready for another round. I don’t recommend freezing soft scrambled eggs.

Ingredients

  • 4 fresh organic eggs
  • ½ tablespoon salted butter
  • 1 pinch sea salt

Instructions

  • Crack the eggs into a bowl, add in a pinch of salt, and then use a fork to whisk them together, making sure the yolks are broken.

  • Heat a nonstick pan over a low flame. Melt the butter in the pan, then spread it around by tipping the pan from side to side.
  • Add the eggs to the pan. Wait a few seconds to let a thin layer of egg set on the bottom, then use your spatula to gently push the set layer of eggs into the center of the pan, letting the raw egg spread out to the sides. Let it set a little again, then gently push it to the center again. Be careful not to move the eggs too much. Cook the eggs until they are nearly done. They will keep cooking in their own heat when you take them out of the pan.

    Finally, the best method for cooking scrambled eggs!!! Been doing it this way for many years. There is no secret ingedient in perfect eggs! Low and slow. Pull pan off burner if it gets too hot. Pull them off a tad undone and plate them. They are so creamy, they taste almost as if you put cheese in them! All technique(simple) not ingredients.
