These three-ingredient Chocolate-Covered Raspberries are simply delicious. It takes no time at all to whip up these fruity and chocolaty treats!

One of my favorite flavor combinations when it comes to dessert is fruit and chocolate. I love how the smooth creaminess of chocolate contrasts with the zesty flavors of fruit, providing a perfect balance that keeps the taste buds on the edge of their seats. My husband knows this, so every year on Valentine’s Day, I can expect a box of chocolates with a beautiful assortment of fruit flavors. Salted caramel may be all the rage, but nothing beats a bonbon filled with strawberry mousse or a delightfully crisp yet melt-in-the-mouth-smooth chocolate-covered cherry. I also love decorating chocolate cakes with fresh, vibrant red berries. Whether currants, strawberries, or raspberries, their ruby-red color contrasts beautifully against all of that dark-brown goodness.

When it comes to the most perfect way of combining fruit and chocolate, however, nothing beats fresh fruit. In this recipe, I’m dipping sweet little kiss-shaped raspberries into pools of decadent melted chocolate to create a truly irresistible treat. Perfect to decorate desserts or breakfast treats, share with someone special—or enjoy them all by yourself!

Are Chocolate-Covered Raspberries Healthy?

Raspberries are low in calories, high in fiber and a good source of vitamins, minerals, and antioxidants. Good-quality chocolate isn’t all that bad for you, either! It’s also a good source of antioxidants and even said to support cognitive function. Pair these two together, and you have a snack that tastes decadent but is actually good for you!

Delicious Ways to Use Chocolate-Covered Raspberries

They’re perfect as a snack, but chocolate-covered raspberries can also be used as a garnish for other baked treats such as cakes, cupcakes, and muffins. You can also add them to your morning smoothie bowl or scatter them over a batch of pancakes or waffles (if that doesn’t make you rise and shine!). I also love adding them to desserts such as chocolate mousse or simply serving them over a bowl of vanilla ice cream!

How to Make Ahead and Store

If you used fresh raspberries as the recipe calls for, they can be dunked, chilled, then placed in an airtight container in the fridge. They will last for about 1 week this way. Another fun way to store these raspberries is in the freezer. Dunk and place them on the parchment-covered baking sheet, as the recipe states, and then pop them in the freezer to firm up. Once frozen, place the frozen chocolate-covered raspberries in an airtight container. They will last in the freezer for up to 3 months this way.

Serving Suggestions

These chocolate-covered raspberries love topping a nice dessert or breakfast treat! Use them to add even more berry goodness to these Healthy Brownie Chocolate Raspberry Mousse Parfaits or serve them frozen in a pool of creamy Custard. And just imagine how delightful they would be with these Overnight Chia Oats or as a garnish for a stack of fluffy Pancakes.

Chocolate-Covered Raspberries

Ingredients

  • 3 ounces semi-sweet chocolate chips dairy-free, if desired
  • 1 teaspoon coconut oil
  • 1 6-ounce package of raspberries

Instructions

  • Line a cookie sheet with parchment paper.
  • In a small, microwave-safe bowl, melt the chocolate chips and coconut oil in the microwave on half power. Cook in 30 seconds intervals, stirring between each interval, until smooth and melted.
  • Dip each raspberry into the chocolate, allowing any excess to drip off. Place the raspberries on the lined baking sheet.
  • Refrigerate for 5-10 minutes, until set.
  • DEVOUR!
