It can be exhausting trying to come up with creative new ways to get your kids to eat veggies, appease your entire family’s picky eating, or even figure out a meal for one that’s worth all the leftover groceries and time spent cooking. But hey, FFF is here to solve all of those problems. In fact, I can solve them all right now with this recipe for salmon and sweet potatoes. Don’t worry, tonight’s dinner is on me! 

With this easy recipe, you basically kill two birds with one stone. Or two dishes with one oven, that is. With just two main ingredients (you guessed it, salmon and sweet potatoes) and a baking sheet, you get a healthy and delicious entrée AND side in under an hour. 

As someone who lives alone, quick cooking times and minimal ingredients are my only requirements when it comes to dinner, so this recipe is one of my holy grails. More than anything, this recipe for salmon and sweet potatoes is a time-saver. For me, it’s the ideal weeknight meal. After a long day at work, the last thing I want to do when I get home is spend the whole evening working more in the kitchen. All I have to do is add a little olive oil and seasoning, and BOOM! Dinner is served.

I usually divide this recipe in half to serve just myself or save the other half for meal prep, but you can also double it to serve a full house. It’s super adjustable to your needs, which is why I opt for it so often. If you’re trying to reduce your time spent cooking every night, this is the recipe for you. The balance of light, savory salmon and dense sweet potatoes makes it a satisfying and flavorful dish without all the extra, well, extraness.

This salmon and sweet potatoes dish is great if you’re looking for a high-protein, high-nutrient meal. Salmon is known for being an excellent source of omega-3 fatty acids. Served with a side of sweet potatoes, you’ll also get your daily dose of vitamins, minerals, and antioxidants. This recipe also steers away from added sugars and other unwelcome additions. It’s just a simple, clean meal to add to your recipe book.

Salmon and sweet potatoes is a great last-minute dinner, but it’s also an amazing choice for busy cooks because you can prepare your salmon and sweet potatoes in bulk and then freeze them in individual portions. That way, you’ll always have a healthy meal ready when you’re short on time.

You can make this meal ahead of time, storing each part separately in airtight containers in the fridge. Leftovers will keep well when refrigerated for up to 4 days.

Serving Suggestions

While your salmon and sweet potato dish is baking, start your easy dinner night off with a refreshing salad. My favorite is a classic Caesar or a Greek Cucumber Salad. 

If you want a little extra for your main course, serve your salmon over a bed of Orzo Risotto. The risotto, combined with the decadence of the sweet potatoes, will give you a comforting meal to end your long day with.

Salmon and Sweet Potato

Ingredients

  • 2 salmon fillets 6 ounces each
  • 2 medium sweet potatoes peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  • Preheat your oven to 400°F. Toss the sweet potatoes with 1 tablespoon olive oil, salt, pepper, garlic powder, onion powder, and rosemary. Spread them on a baking sheet.

  • Bake in the preheated oven for 15 minutes until they begin to soften.
  • While potatoes cook, drizzle the salmon fillets with the remaining 1 tablespoon olive oil and season with salt and black pepper.

  • Remove the baking sheet from the oven, push the sweet potatoes to one side, and place the salmon fillets on the other side of the sheet.
  • Return to the oven and bake for 10-15 more minutes, or until the salmon is cooked through and flakes easily with a fork.
