But if you’re looking to lower the calorie count on this dish, you can go a little easier on the sauce or pair your finished dish with a side of veggies or some cauliflower rice. If you want to make this dish paleo or Whole30-friendly, swap the regular Buffalo sauce for one that doesn’t have sugar or other additives.

You can make this Buffalo chicken recipe as spicy or mild as you’d like. The secret is the sauce—the spice level of the Buffalo sauce you use will dictate how spicy the end product is. If you like a little heat, opt for a spicy Buffalo sauce, or make your own and go heavy on the right spices. Or, choose a sauce that’s more mild instead. The choice is yours.

How to Store Buffalo Chicken

This recipe is easy to cook, easy to use, and SO easy to freeze! If you’ve got leftovers of this tasty chicken, or you simply made a double batch to enjoy later, you’ve got the right idea! Simply place the cooked Buffalo chicken in a freezer-style bag or a freezer-safe, airtight container. Label the chicken with the date and store it in the freezer for up to 3 months. You can also store it in the fridge in an airtight container for 3 to 4 days.

Instant Pot Buffalo Chicken

Ingredients

  • 1 pound boneless skinless chicken breast
  • 1 cup Buffalo sauce (Whole30 version if desired)
  • 1/4 teaspoon salt
  • Pinch of pepper

Instructions

  • Place the chicken into your Instant Pot and add the Buffalo sauce, salt and pepper.
  • Cover, set to 'Sealing', and cook on manual high pressure for 10 mins.
  • Do an instant steam release (you can check that the chicken is cooked to 165 degrees F) and then remove the chicken.
  • Shred the meat and stir it back into the sauce before serving.
