You know when you take a vacation, and it becomes THE vacation? Like everyone who went never stops talking about it, and you try to explain the feeling of being there but it seems impossible, and you long to go back and experience it all over again exactly the same way? For me, that vacation destination was New York City.

If you’ve ever been to New York, you know the enchantment it casts on its tourists. The city is alive with music, art, people, food … ugh, the FOOD! You have not lived until you’ve tried Magnolia Bakery’s famous banana bread pudding or discovered a 24-hour, hole-in-the-wall pizza joint in Brooklyn that serves sourdough crust. New York is famous for quite a lot of things. But at the top of the list, in my opinion, is its incomparable bagel sandwiches. 

When I look back on my trip to New York, all I remember eating are these incredible bagel sandwiches right off the subway entrance. I always ordered mine with avocado, turkey bacon, and hot sauce, and I swear I lived off of these things for my entire week-long stay in the city. Ever since I’ve been back, I’ve been craving them and trying to recreate them at home. And with this bagel sandwich recipe, I think I’ve finally got it down.

This dish has all the makings of an iconic breakfast on the go. Egg fried in a little bit of butter or olive oil, a perfectly toasted bagel, melty gooey cheese, all topped with crispy turkey bacon, thick slices of avocado, and your favorite hot sauce (mine is smoked chipotle Tabasco—yum!). Well, now that I’ve got your mouth watering, let’s actually make one of these bad boys. 

Are Bagel Sandwiches Healthy?

As far as bagel sandwiches go, this one features turkey bacon and avocado for healthier ingredient choices. The classic version of this dish is pretty high in calories, but you can modify it to fit your own dietary needs. Opt for a whole-grain bagel, veggie toppings like tomato, onion, and sprouts, and a scrambled version of the egg for less added fat with all the same protein. You can even ditch the turkey bacon and make a vegetarian version of this sammie!

Level Up With Bagels Made From Scratch

You can put a homemade spin on your bagel sandwich by making your own bagels from scratch! All you need are a few simple pantry staples (bread flour, sugar, and salt), warm water, and some active dry yeast to make your dough. After you knead your dough and let it rise, you can shape your bagels and boil them in a baking soda bath for an easy and classic flavor.

Making your own bagels at home also allows you to fully customize the flavor! You can make everything bagels, sesame seed bagels, or even go sweet with these Cinnamon Crunch Bagels Inspired By Panera! These bagels are also whole wheat and butter-free, though you may want to rethink your savory sandwich ingredients.

INGREDIENTS

  • 1 plain bagel
  • 2 slices of turkey bacon
  • 1 tablespoon unsalted butter
  • 2 large eggs
  • 1 slice of cheddar cheese
  • Salt and pepper to taste
  • 1/4 avocado, sliced
  • Hot sauce, optional

INSTRUCTIONS

Prep
Toast bagel, cook bacon.

Cook
Fry eggs with butter, season.

Assemble
Layer ingredients on bagel, top with egg and cheese.

Devour!

How to Make Ahead and Store

You can refrigerate assembled bagel sandwiches for up to 3 days in the fridge if wrapped tightly in plastic and stored in an airtight container. You can also store them in a freezer-safe container in the freezer for up to a month. To reheat your bagel sandwich, remove the plastic and microwave until heated thoroughly. Alternatively, you can thaw it, and then wrap it in foil and air fry it at 350° F for 15 to 20 minutes.

Serving Suggestions

This bagel sandwich makes for a quick yet filling breakfast. Try it with Avocado Spread instead of slices or with a Béarnaise Sauce for a Benedict vibe. However you enjoy your on-the-go breakfast sandwich, don’t forget to grab a coffee to go with it!

Ingredients

  • 1 plain bagel
  • 2 slices of turkey bacon
  • 1 tablespoon unsalted butter
  • 2 large eggs
  • 1 slice of cheddar cheese
  • Salt and pepper to taste
  • 1/4 avocado sliced
  • Hot sauce optional

Instructions

  • Slice the bagel in half and toast it to your desired doneness.
  • In a skillet, cook the turkey bacon until crispy, then set aside on a paper towel to drain.
  • In the same skillet, melt butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and fry to your liking.
  • Place the slice of cheddar cheese on one egg while still in the skillet to melt slightly. Layer the cooked bacon, plain egg and avocado slices on the bottom half of the toasted bagel.
  • Top with the cheesy egg and hot sauce if using, then cover with the other half of the bagel.
