Rum on a Monday morning feels like the kind of decision that probably warrants a conversation with someone responsible—but here we are. Technically it’s rum extract, but the point stands. These coconut rum raisin energy balls are my way of reclaiming Mondays with something just a little extra, in the best possible way. Slightly tropical, a little boozy-flavored (but totally family-friendly), and just the right kind of chewy, these are my go-tos when my energy is tanking and the to-do list is being rude.

There’s something about the combo of warm cinnamon, toasted coconut, nutty richness, and sweet, chewy raisins that completely hits the spot. The rum extract brings in some more mellow warmth that makes them taste way more interesting than the average energy bite. I’m definitely not mad about grabbing one with my mid-morning coffee.

They’re also absolutely foolproof to make. Like, toss-it-in-the-food-processor-and-go foolproof. If you’ve got 20 minutes and a food processor, you’re in business. No baking, no waiting around; just roll, chill, and snack away.

Are Coconut Rum Raisin Energy Balls Healthy?

These energy balls are good enough to have for dessert, but most of the ingredients are nutritionally solid. The almonds and almond meal are rich in vitamin E, magnesium, and fiber. Nut butter adds healthy fats and protein, while the raisins offer plenty of antioxidants. The honey bumps up the sweetness without the need for any refined sugar, and the scoop of vanilla protein powder helps bump up the satiety factor.

These energy balls are gluten-free, and, depending on your protein powder and nut butter, could easily be made Paleo or dairy-free. Swapping out the honey for maple syrup or agave will also make them vegan.

A Rum Raisin Throwback

There’s something nostalgic, retro, and oddly comforting about rum raisin-flavored anything. Maybe that’s because it reminds me of an old-school ice cream shop or a flavor of ice cream that Grandma always had tucked into the back corner of the freezer. It’s a throwback to a simpler time. I like to think of this recipe as an homage to those old-school vibes, only redefined as a snack you can feel good about indulging in. So if you’re feeling a trip down memory lane but don’t want to turn to sugary sweets, give these a try. They’re worth it.

How Do I Store Leftovers?

You can keep them in an airtight container in the fridge for up to 1 week. They hold their shape well, and I think they actually taste even better chilled. You can also freeze them stored in a freezer-safe bag for up to 3 months.

Serving Suggestions

While you could totally grab one of these energy balls on your way out the door, I also think they make a wonderful accompaniment to a full breakfast. I like to have them alongside some hearty Protein Pancakes or Blueberry Protein Waffles. They are also delicious to have on the side of some Coffee Overnight Oats With Greek Yogurt or a Chocolate-Peanut Butter-Banana Smoothie. I also love to wash the whole meal down with a warming Chai Latte!

Ingredients

  • 2-3 teaspoons almonds chopped
  • 1/4 cup almond meal
  • 1/3 cup shredded coconut plus extra for rolling
  • 1/4 cup vanilla protein powder plus extra for rolling
  • 1/4 cup raisins
  • 1/2 teaspoon rum extract
  • 1 teaspoon cinnamon
  • 1/3 cup nut butter
  • 1/4 cup raw honey
  • 1/2 teaspoon vanilla extract

Instructions

  • Place all the ingredients in a large bowl. With clean hands, mix well until fully combined and a dough has formed.
  • Line a baking tray with parchment paper or aluminum foil. Then, using a heaped tablespoon measure, roll the dough into equal bite-size balls, and place them on the baking tray.
  • Place the baking tray in the freezer for 10-15 minutes to firm up the balls. If you're short on time, you can skip this step.
  • Combine a dusting of extra protein powder and some shredded coconut on a plate. Roll the balls through this mixture until they're well coated. Place them in the freezer until you're ready to eat.
