I’m going to go out on a limb and say that most people enjoy both pizza and dessert. Therefore, it makes all the sense in the world to combine the two, right? That’s exactly what you do with this recipe for fruit pizza. Obviously, it’s not a traditional pizza with sauce, cheese, and toppings. Instead, it has a crust that’s akin to a giant cookie, cream cheese frosting, and as much fruit as you can fit on. It’s a simple recipe to follow that’s perfect anytime you want to do something special for dessert or when you want to make a fruit-forward treat.

Needless to say, this dessert pizza is going to be pleasing to the taste buds. In every bite, you can taste the soft cookie crust, sweet and creamy frosting, and delicious fruit. Of course, the exact taste and texture will depend on the type of fruit you choose. But for the most part, any combination of fruit will come out tasting great on this pizza.

Fantastic taste aside, the other reason I love making fruit pizza is that you can turn it into a work of art by arranging various fruits in patterns to fit the occasion. For Valentine’s Day, you can put strawberries into the shape of a heart. On the 4th of July, you can create a red, white, and blue flag with strawberries, bananas, and blueberries. The possibilities are virtually endless. In addition to tasting great, fruit pizza is a great way to unleash your creativity and create edible artwork!

The best fruits to choose for your pizza

As mentioned, the fruits you put on your pizza are up to you based on what fruits you like and the edible artwork you want to create. However, some fruits are better suited for fruit pizza than others. For example, fruits that are particularly watery—such as watermelon—are not always a good choice because they can make the crust soggy. There is a similar concern if you use canned fruits instead of fresh fruit. Make sure you drain and pat dry any canned fruits before putting them on the crust. In fact, if you wash your fresh fruit before preparing your fruit pizza, make sure you pat it dry as well. Other than that, feel free to be as creative as you want with your choice of fruit.

How do I store leftovers?

While best eaten immediately, leftover fruit pizza can be covered tightly in plastic wrap and stored in an airtight container in the fridge. The leftovers should remain good for at least 2 days. I don’t recommend freezing any leftovers, as the fruit may become mushy and the crust soggy upon thawing.

Serving suggestions

Fruit pizza can definitely be served on its own as a dessert. However, it wouldn’t be so bad to have a scoop of Cottage Cheese Ice Cream or some Vegan Banana Ice Cream Bars on the side. Naturally, a smoothie is also a good way to add even more fruit to your dessert. I would suggest blending up a Fruit Smoothie that will complement the fruits you have on your pizza. But you can also mix things up by making a Peanut Butter Low-Carb Keto Smoothie or perhaps include some vegetables by making a Zucchini Smoothie.

Ingredients

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 1/4 teaspoons baking powder
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg room temperature
  • 3/4 teaspoon vanilla extract

For the Frosting:

  • 8 ounces cream cheese softened
  • 1/4 cup unsalted butter softened
  • 1 1/3 cups powdered sugar

For the Toppings:

  • 3 cups assorted fresh fruit such as strawberries, blueberries, kiwi, and grapes
  • 1/2 cup orange marmalade
  • 1 1/2 tablespoons water

Instructions

  • Preheat your oven to 350°F. In a medium bowl, whisk together the flour, cornstarch, and baking powder.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed until light and creamy, about 2 minutes. Add the egg and vanilla extract and beat until well combined.
  • Slowly combine the dry ingredients with the butter mixture until they're just mixed. Wrap the dough and refrigerate it for 1 hour. Then let it rest at room temperature for approximately 15 minutes.
  • Evenly press the dough into a lightly greased 12-inch pizza pan to create a circle approximately 1/3-inch thick. Bake for around 18 minutes, or until the edges turn a light golden brown. Once baked, remove it from the oven and allow it to cool completely on a wire rack.
  • In a medium bowl, beat the cream cheese and softened butter until smooth. Gradually add the powdered sugar and beat until the frosting is light and creamy.
  • Spread the cream cheese frosting over the cooled crust, and arrange fresh fruit on top.
  • Mix the orange marmalade and water together. If needed, microwave the mixture until it is looser and spreadable.
  • Use a pastry brush to glaze the fruit with the orange marmalade mixture. Chill the assembled fruit pizza in the refrigerator for at least 1 hour before serving to let the flavors meld. Slice and enjoy.
