Are Instant-Pot Boiled Potatoes Healthy?
Without a doubt! While potatoes sometimes get a bad reputation for being fattening, it’s not the humble, plain potato that’s the issue—it’s how we prepare and serve them. French fries or hash browns can be high in fat, but a baked potato with a squeeze of lemon juice, a light drizzle of olive oil, and a sprinkle of flaky sea salt is a healthy option. How To Make Ahead and Store
Boiled potatoes, once cooled, can be stored in the fridge in an airtight container for up to 3 days. Freezing is not recommended as the high water content will mean mushy potatoes once thawed!

- 1 cup water
- 1 pound potatoes (I used red)
Instructions
- Place the water in the Instant Pot and place a trivet in the pot.
- Place the potatoes on the trivet, cover and set to "Sealing."
- Cook on manual high pressure for 13 minutes. Do not do a quick steam release. Let it release naturally.
