I am not sure how it reached the heights that it did, but there is a Chipotle on just about every corner. I see them everywhere. And now you have a recipe that offers a taste of Chipotle without ever having to leave your house. It’s their signature guacamole spread that goes great on just about anything.
I haven’t met a ripe and ready avocado that I didn’t love. I could eat them plain and oftentimes do with a dash of salt or squeeze of lime. There is nothing better than a crispy tortilla chip piled high with freshly made guacamole. The best poolside snack or happy hour treat. Not only is this a quick and easy snack to make, ready within a matter of minutes, but it’s nutritious and can be used on sandwiches or alongside a main of your choice.
Is Chipotle Guacamole Healthy?
I love avocados as they are. Even if they weren’t loaded with healthy fats great for your skin, hair and nails, it wouldn’t matter, they are just so tasty. The soft, buttery and creamy texture does it for me. They make for great spreads and dips because of this. They are a great source of vitamins C, E, K, and B6, as well as magnesium and potassium. However, they are most commonly known for their abundant levels of monounsaturated fats.

Common optional additions I have seen are diced tomatoes, garlic and wait for it… mango! These can all be included, although I find less is usually more when it comes to a fresh guacamole. With that said, it’s so quick to make, sometimes a few extra ingredients don’t hurt. I also encourage people to experiment and go off the beaten path when it comes to cooking and following recipes. That is where you discover what you like, and sometimes what works for one, doesn’t work for the other. I also find myself in situations often where I don’t have all the ingredients for the recipe I am hoping to create. So I improvise and use what I have on hand. It’s always a great way to avoid food waste, plus, you never know what your experimenting may give birth to.

- 3 ripe Hass avocados
- 1 tablespoon lime juice
- 1/4 cup finely chopped red onion
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon finely chopped jalapeño (seeds removed for less heat)

INSTRUCTIONS
Prepare
Halve and pit avocados, and scoop them into a bowl.
Mash
Add lime juice and mash avocados.
Mix
Combine with onion, cilantro, jalapeño, and salt.
Devour!

How to Make Ahead and Store
Once you have mixed all of your ingredients together, store your guacamole in an airtight container in the refrigerator for up to 2-3 days. To prevent it from turning brown, leave the pit from one of the avocados in the bowl and add extra lime juice to the top. Additionally, place a sheet of plastic wrap directly on the surface of the guacamole before sealing the container with a lid.

Serving Suggestions
