In America, meatloaf is practically as traditional as apple pie. The origins of the popular dinner dish can be traced back to the late 19th century when a similar recipe was introduced to the United States by the Pennsylvania Dutch settlers. Back then, it was known as “scrapple” and eaten for breakfast. Meatloaf later became popular during the Great Depression, when making food last longer and feeding a family was a challenge. In the 1950s, meatloaf appeared in cookbooks and has remained a favorite because of its simplicity and affordability ever since.

But meatloaf is so much more than a dish that’s affordable and easy to make; it’s also hearty and appetizing, truly making it a meal to look forward to. We’ve enjoyed Italian Meatloaf and Turkey Meatloaf, which are both delish, but today our gluten-free meatloaf follows more of a traditional recipe. This meatloaf is like one big, juicy meatball with tons of flavor from an array of spices, onions, and a bit of brown sugar. However, it is made without traditional breadcrumbs, so those with a gluten intolerance won’t have to miss out.

Is Gluten-Free Meatloaf Healthy?

This meatloaf is a high-protein, gluten-free, hearty dish. If possible, use lean, grass-fed ground beef instead of regular grain-fed beef. It has less fat and fewer calories. Additionally, the spice mix is a great way to add flavor and cut back on salt.

Tips for a juicy, perfect gluten-free meatloaf

While meatloaf hasn’t always had the best reputation, it can come out perfectly moist, delicious, and leave your friends and family asking for seconds. First, you do not want to overmix your ingredients. This can lead to a dense or even rubbery texture. An age-old trick is to combine your milk with gluten-free breadcrumbs, egg, and spices and let it sit for a few minutes before adding the meat. Also, allow your gluten-free meatloaf to rest for about ten minutes before slicing.

How to Make Ahead and Store

To make ahead, prepare the gluten-free meatloaf as directed, but do not bake it. Instead, wrap tightly and freeze for up to 3 months. In the fridge, meatloaf can be stored for up to 3 days. The baked meatloaf can also be sliced and stored in individual portions in the freezer or refrigerator.

Serving Suggestions

A delicious, hearty meal like meatloaf needs the perfect companion. Ingredients

  • 1 large egg whisked
  • 1 cup gluten-free breadcrumbs
  • 2 tablespoons gluten-free Worcestershire sauce
  • 1/4 cup milk dairy-free options: almond, cashew, or coconut milk
  • 2 tablespoons dried chopped onion
  • 1 tablespoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1/4 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 pounds lean ground beef 90% or leaner
  • 3/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/2 teaspoon mustard powder

Instructions

  • Preheat oven to 350°F. Line an 8×4-inch loaf pan with parchment paper.
  • In a large bowl, combine the whisked egg, breadcrumbs, Worcestershire sauce, milk, dried onion, onion powder, garlic powder, thyme, oregano, parsley, paprika, salt, and pepper. Let sit for 2-3 minutes.

  • Add the ground beef to the breadcrumb mixture. Use your hands to combine fully, but do not overmix.

  • Transfer the meat mixture to the loaf pan and pat down into an even layer.

  • In a small bowl, stir together the ketchup, brown sugar, and mustard powder. Pour the glaze on top of the meatloaf and spread it in an even layer.

  • Bake on the middle rack for 1 hour and 15 minutes, or until the internal temperature reaches 160°F.
  • Let the meatloaf rest for 10 minutes before cutting and serving.
