Most people probably don’t think of Ohio as a great culinary center. However, there is at least one culinary highlight in Ohio, and that’s buckeye candy. This popular candy combines peanut butter and powdered sugar into little balls that are dipped in chocolate. It’s nothing short of a delicacy. Since making this candy can be time-consuming, it’s sometimes better to make buckeye brownies, which takes all of the main ingredients of buckeye candy and puts them in a batch of brownies that’s easy to make, and tastes just as good as the candy.

This brownie recipe is one of the best ways to combine chocolate and peanut butter in the same dessert. Surely, most people know that chocolate and peanut butter are an incredible duo. There are only a few extra steps beyond an ordinary brownie mix, so it’s an easy recipe to follow, and it produces rich and fudgy brownies that you won’t soon forget.

Are Buckeye Brownies Healthy?

As you might expect, buckeye brownies aren’t the healthiest dessert. There is a lot of powdered sugar, as well as added sugar from the chocolate chips. Keep in mind that the recipe calls for making brownies from a store-bought mix. Depending on which version of store-bought brownies you use, there is likely to be a lot of fat and calories in these brownies. If there is a silver lining, peanut butter is a good source of protein, which adds a little nutritional value.

Make Sure Your Layers Are Smooth

With the layers of peanut butter and chocolate that are poured on top of the brownie batter, it’s important that the mixtures be as smooth as possible. For the chocolate layer, make sure the chocolate chips are totally melted and thinned to the right consistency. For the peanut butter mixture, it’s best to use creamy peanut butter while staying away from all-natural brands because they can be too oily. You can also consider using a hand mixer or a stand mixer to ensure the smoothness of the peanut butter layer.

INGREDIENTS

  • 1 box brownie mix
  • Ingredients required for brownie mix (usually oil, water, eggs)
  • 2 1/4 cups powdered sugar
  • 1 cup creamy peanut butter
  • Pinch of kosher salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups milk chocolate chips
  • 2 teaspoons whole milk
  • Vegetable oil, as needed

How to Make Ahead and Store

By keeping buckeye brownies in an airtight container and storing them in the fridge, they should remain good for up to 1 week.

Serving Suggestions

It’s not easy to improve upon the taste of buckeye brownies. However, you can try them with a scoop of vanilla ice cream, or a Vanilla Milkshake. Just in case you want a little nutritional value with your dessert, you can serve your buckeye brownies with either a Fruit Salad or a Fruit Smoothie.

If this brownie recipe sounds too rich or doesn’t fit your diet, there are some alternatives to know about. For instance, you might want to try Vegan Gluten-Free Brownies instead. You might also consider this recipe for Vegan Brownies with Berries and Tahini. Finally, there might be a way to mimic the taste of buckeye brownies using this recipe for Low-Carb Keto Brownies as your base brownie layer.
