This Brie Grilled Cheese With Apples feels so fancy but is so easy to make!

Name a food that is better than a grilled cheese sandwich. We’ll wait…

Having trouble thinking of something? That’s what we thought! And this grilled cheese sandwich with Brie and apples is about to prove our point.

We’re talking crispy, buttery bread with ooey-gooey melty cheese in the middle. It’s simple, it’s comforting, and it’s just so dang good.

To make this Brie grilled cheese, we add the most amazingly fresh, sweet, and spicy apple chutney and crispy, toasty almonds on the inside. You might actually think you’ve gone to a cute little bistro for lunch, but hey — you’re just an ultra-fancy lunch-making person!

Is This Brie Grilled Cheese With Apples Healthy?

This is meant to be more of a “comfort” food than a “health” food, and that’s perfectly alright. While you get some potassium, vitamin C, and fiber from the apples, this is still a carby sandwich full of cheese and toasted nuts, which will up the calorie count. Enjoy it as some much-needed soul food on a day when you need a pick-me-up!

How To Cut Brie For A Sandwich

There’s no need to cut the rind off Brie cheese as it’s perfectly safe to eat, and it melts well when you warm it in a sandwich. However, if you don’t like the texture, you can follow these steps to remove it:

  1. Wrap the Brie tightly in plastic wrap and freeze for at least 30 minutes.
  2. Once frozen, remove the wrap and slice off the top and bottom of the Brie. This should be easy since the cheese should be frozen.
  3. Then, simply lay the Brie flat against a cutting board. Then, use a serrated knife to cut along the edges and slice off the sides. As you cut, start pulling the sides of the rind away from the cheese. Continue until you’ve completely removed the rind.
  4. Slice like normal cheese and make your sandwich!

How to Make Ahead and Store

It’s best to enjoy this sandwich fresh so the bread is nice and crispy and the cheese is melty. However, you can prep the apple mixture ahead of time and refrigerate it. When ready, assemble and grill the sandwich.

Serving Suggestions

In my opinion, Brie cheese is one of the best cheeses on the planet. It’s salty and has a rich, deep flavor. Because of that, you don’t want to pair it with something else that has a super distinct flavor, or it will all taste a little muddy. To keep it simple, serve your apple and Brie grilled cheese with a side of Air-Fryer Apple Chips, and enjoy!

Ingredients

  • 2 tablespoons slivered almonds toasted
  • 2/3 cup apples, diced (I like Fuji)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 4 ounces Brie cheese, sliced
  • 4 slices sourdough bread (or gluten-free bread if needed)
  • 2 tablespoons butter

Instructions

  • Preheat oven to 400 degrees, and spread the slivered almonds on a small baking sheet. Bake them until lightly browned, about 4 to 5 minutes.
  • Mix the toasted almonds, diced apples, maple syrup, ginger, and cinnamon together in a small bowl.

  • Divide the Brie slices between all 4 pieces of bread.

  • Melt the 2 tablespoons of butter in a large pan over medium heat.
  • Once the butter is melted, place 2 slices of bread into the pan, cheese side up.
  • Quickly divide the apple and almond mixture between both pieces of bread, and top with the remaining slices of bread, cheese-side down.

  • Cook until golden brown, about 1 to 2 minutes, and then flip and repeat on the other side.
