Asparagus and I go way back. It was the first vegetable I remember liking as a kid outside of iceberg lettuce. Who could resist those jolly green trees? I used to pretend I was a giant eating a tiny forest, which was good enough for my mom to keep it on the menu. These days, I’m a fan of pretty much every vegetable, but asparagus will always be my first love. That’s why I’m always searching for new ways to enjoy this glorious veggie. One of my favorite recent discoveries? Blanching. It really brings out the crisp, vibrant flavor of asparagus in a way that feels almost refreshing.

This recipe is a celebration of everything I love about asparagus. Blanched asparagus is light, crisp, and just tender enough to bite through without losing its crunch. The quick dip in boiling water enhances its natural sweetness while maintaining that unmistakable earthy flavor. 

Paired with the maple-Dijon vinaigrette, it’s a perfect balance of tangy, sweet, and savory with a hint of garlic. The dressing clings to the spears without overpowering them, letting the asparagus shine.

While you can certainly enjoy the blanched asparagus on its own or atop your favorite salad, you should really try this homemade vinaigrette. The dressing adds a tangy, sweet kick that makes you feel like you’re eating at a fancy restaurant for brunch. 

Another reason I love this recipe is that it’s quick and easy. I’m talking 20 minutes tops. So, make a batch! Once you try it, I’m pretty sure you’ll want to add it to your asparagus recipe list.

Is Blanched Asparagus Healthy?

Asparagus provides vitamins like A, C, and K, as well as folate and fiber. Also, unlike other cooking methods, blanching preserves the good stuff. And since blanching doesn’t require any added fats or oils, it’s low-calorie, too!

Why Blanch Asparagus?

Blanching is one of the simplest ways to prepare asparagus, and I love how this method highlights its natural flavor. Oftentimes, we add so many spices, oils, and sauces that we forget that a lot of veggies (like asparagus!) don’t need much to taste delicious! Plus, blanching is perfect when serving a crowd! You can make the asparagus ahead of time and toss it with the dressing just before serving.

How Do I Make This Recipe Ahead And Store It?

Well, that’s what this recipe is all about, right? Blanch the asparagus as instructed, then store it in an airtight container in your fridge for up to 5 days. However, keep the dressing separate and toss just before serving.

Serving suggestions

Blanched asparagus pairs quite well with grilled proteins like cod, chicken, or steak. It would also be a fantastic addition to this Cobb Salad and is delicious served as a simple appetizer with a creamy Blue Cheese Dip.

Easy Blanched Asparagus Recipe with Maple Dijon Vinaigrette

Ingredients

  • 2 bunches of asparagus
  • 2 1/2 teaspoons red wine vinegar
  • 1 tablespoon maple syrup
  • 1/2 tablespoon Dijon mustard
  • 1/2 tablespoon garlic minced
  • 1/4 teaspoon salt
  • Pinch of pepper
  • 1 tablespoon olive oil

Instructions

  • Bring a large pot of salted water to a boil.
  • Trim the woody ends of the asparagus and place them into the water once it's boiling
  • Blanch for 2-3 minutes, until the asparagus has turned bright green.
  • Quickly transfer the asparagus into a large bowl of ice water to halt cooking.
  • Let it sit for 10 minutes.
  • While the asparagus cools, mix the red wine vinegar, maple syrup, Dijon mustard, garlic, salt, and pepper in a small bowl.
  • Once mixed, slowly add in the olive oil.
  • Drain the asparagus and drizzle with the dressing.
  • Devour!
