When fall and winter roll around each year, I’m more than ready with my list of cozy chili recipes. From healthy turkey chilis and vegan chilis packed with beans, to hearty beef chilis full of warming spices, nothing says comfort food like a steaming bowl of chili. Chilis make the perfect one-pot meal and are loved by all. It’s no wonder they’re such a favorite.

Today, I’m adding a little twist to my usual lineup with this rich and satisfying Buffalo chicken chili. Made with healthy ingredients and fragrant spices, this one-pot meal is sure to be a hit with the whole family. It might even earn a regular spot in your meal rotation!

While this chili has a bit of a kick, it’s not overly spicy. It has just the right amount of Buffalo flavor without too much heat, making it enjoyable even for those who don’t typically love spicy food!

Is Buffalo Chicken Chili Healthy?

With lean chicken breast and beans, this Buffalo chicken chili is a good source of protein. The beans also provide fiber, helping you feel fuller for longer. While the cream cheese adds some saturated fat, you can swap it for a light version or Greek yogurt, if that’s a concern. To boost the dish’s nutritional profile, try adding extra vegetables—mushrooms, bell peppers, or even a handful of greens make great additions.

How to Make Ahead and Store

This chili is actually one of those dishes that tastes even better the next day because all the flavors get a chance to meld. Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to 3 months.

Serving Suggestions

To keep the Buffalo theme going, a fun starter to this meal would be a batch of Buffalo Cauliflower Wings. For extra texture, serve the chili with a handful of Air-Fryer Tortilla Chips. An excellent hearty side would be this Easy Sweet Vegan Cornbread With Applesauce or Cornbread With Creamed Corn. All together, this is an extra special meal that everyone will look forward to!

Buffalo Chicken Chili

Ingredients

  • 2 tablespoons olive oil divided
  • 1 pound chicken breasts
  • 1 cup celery thinly sliced
  • 3/4 cup onion diced
  • 1 tablespoon fresh garlic minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 can fire-roasted diced tomatoes (14.5 ounces)
  • 1 can white navy beans drained and rinsed (14 ounces)
  • 1 cup frozen corn
  • 1/2 cup chicken broth
  • 1/2 cup Buffalo wing sauce
  • 1/2 teaspoon salt
  • Pinch of pepper
  • 1/2 cup cilantro minced
  • 8 ounces cream cheese
  • Blue cheese for garnish (optional)

Instructions

  • Heat 1 tablespoon of the oil in a large pan on medium-high heat. Sear the chicken breasts on both sides until golden and then transfer to a plate.
  • Heat the other 1 tablespoon of the oil in the pan on medium-high heat. Add the celery, onion, and garlic, and cook until they begin to soften, about 5 minutes.
  • Add the spices and cook until the spices are fragrant, about 2-3 minutes.
  • Add all the ingredients up to the cilantro and stir until well combined. Then, bring to a boil.
  • Once boiling, nestle the chicken breasts into the chili, turn down the heat to medium-low, and cover the pan. Simmer for 30 minutes, stirring occasionally.
  • Once simmered, remove the chicken, cut the cream cheese into little cubes, and stir in until melted.
  • Shred the chicken and stir it in. Stir in the cilantro.
  • Top each bowl with blue cheese, if desired.
