One of my favorite parts of living a few blocks from the beach is that the summer months feel like an endless beach party! Families flock to the shore with their beach tents and picnic baskets, and dogs tumble joyfully through the ocean waves. With months of sunshine stretching ahead of me, I always find myself craving a cold and beachy treat I can slurp beside the water.

This pineapple smoothie with coconut cream is one of my favorite recipes to enjoy beachside in the summer months. The frozen pineapple delivers a sweet and bright flavor, and the coconut cream gives this smoothie a lush and dreamy texture. With just a drizzle of honey to amplify the natural sweetness of the pineapple, it’s easy to see why this smoothie has become a go-to for me.

With only three simple ingredients, this smoothie is ridiculously easy to whip up in a pinch. Whether you’re powering up for a long workday or winding down on the shore, this smoothie is a delectable reminder that healthy can still feel like an indulgent treat.

Is This Pineapple Smoothie With Coconut Cream Healthy?

With just three plant-based ingredients, this pineapple smoothie is definitely a wholesome treat. The frozen pineapple is both naturally hydrating and a rich source of vitamin C. Honey lends a natural sweetness to this smoothie and also contains antioxidants. Bear in mind, however, that the coconut cream is high in saturated fat. If that’s a concern, you may want to use soy milk instead. To make this recipe suitable for vegans, you can swap the honey for agave nectar. If you’d like to decrease the sugar content in this smoothie, you can replace the honey with liquid stevia or monk fruit sweetener. You can also eliminate the honey altogether, as the pineapple does lend a natural sweetness to this drink.

How To Make Coconut Cream At Home

You can absolutely use store-bought coconut cream for this recipe, but did you know that it’s pretty easy to make your own coconut cream at home? If you’d like to go the DIY route, all you need is one can of full-fat coconut milk. Place the can of coconut milk in the refrigerator overnight or for a minimum of eight hours. Chilling the coconut milk causes the cream to separate and rise to the top of the can. After you’ve finished chilling your coconut cream, open the can—and be careful not to shake it as you do so! Use a spoon to gently scoop out the layer of cream from the top of the can and transfer it to a bowl or other container. This will be your coconut cream! You can store your coconut cream in an airtight container in the fridge for up to one week. You can also store the remaining coconut water to use in smoothies or baking.

How Do I Store Leftovers?

I definitely recommend enjoying this smoothie right after blending, but if you wind up with leftovers, you can absolutely save them for later! Just transfer your remaining smoothie to an airtight container like a mason jar. You can store your leftovers in the fridge for up to 24-48 hours. Just make sure to give your smoothie a good stir or shake before serving!

Serving Suggestions

I personally love serving this smoothie as part of a well-rounded breakfast or brunch. You could pair your pineapple smoothie with Protein Chia Pudding, Blackberry Muffins, or a Yogurt Parfait.
