I signed on to the whole avocado toast scene extremely late, as I’ve never been one to jump into the “craze” of the moment, figuring it would pass soon enough. Was I ever wrong! Okay, I admit this dish is here to stay. And with vegan avocado toast, you don’t need to feel left out of the fun and deliciousness.

It is low in calories, carbohydrates, sugar, cholesterol, and saturated fat and provides a good source of heart-healthy monounsaturated fat and fiber. Using vegan, gluten-free bread makes this recipe suitable for individuals with gluten intolerance. If desired, adding some hummus or chickpeas can help increase the protein in this dish.

How To Create An Avocado Toast Charcuterie Board

Charcuterie boards are all the rage these days, and yes, I’ve jumped on this trend, too. They’re great for parties, and creating an avocado toast charcuterie board is ideal for a weekend brunch, a bridal shower, a baby shower, or a book club get-together.

How do you get started? I recommend stocking up on a variety of vegan breads, bagels, and crackers so people have options for their bases. Fill small bowls with the mashed avocado from this recipe, vegan scrambled eggs (link in the serving suggestions section below), chopped chives, capers, and pumpkin seeds. Ingredients

  • 2 slices whole grain bread
  • 1/2 large ripe avocado or one small avocado
  • 1 teaspoon lemon juice
  • 1/8 teaspoon kosher salt plus more to taste
  • Pinch of black pepper
  • Pinch of garlic powder
  • Pinch of onion powder
  • Optional: everything bagel seasoning to taste
  • Optional: red pepper flakes for garnish

Instructions

  • Place the 2 slices of whole grain bread in a toaster and toast until golden brown.
  • Slice the ripe avocado in half and discard the pit. Scoop out the flesh into a bowl and mash it with a fork. Mix in lemon juice, salt, black pepper, garlic powder, and onion powder. Adjust seasonings as needed.
  • Evenly spread the avocado mixture on the toasted bread. For added flavor, top with everything bagel seasoning or red pepper flakes if you’d like. Serve right away.
