When I’m in the mood for an indulgent dessert that’s going to curb my cravings for something sweet, without being too sweet, my mind often goes straight to brownies!

While you’re probably used to cooking your brownies in a loaf tin, a baking tray, or in individual muffin portions, have you ever tried making them in the Instant Pot?

You heard it right! This brownie recipe makes the most perfectly chewy, sweet, and chocolatey brownies all inside your Instant Pot!

Unconventional? Sure! Delicious? ABSOLUTELY.

Are Instant Pot Brownies Healthy?

Let’s not kid ourselves. As delicious as these brownies are, I would never label them “healthy” – but that’s okay! Not everything in life has to be good for us, and sometimes it just needs to be good for our souls, and bring us joy.

This brownie recipe should be enjoyed in moderation, but when I hear that, what I actually hear is: “Freeze some portions for a rainy day.” Who doesn’t want warm, homemade brownies ready whenever they want from the freezer?

Why Use The Instant Pot?

That’s the question of the hour! If you can easily whip up brownies in the oven, then why would you use an Instant Pot to make brownies?

Firstly, you don’t need an oven! Not everyone has access to an oven, and the electrical bill for running an oven can sometimes be quite high. So, as an alternative, bake using your Instant Pot! You can also travel with an Instant Pot, which makes baking brownies on the go totally doable.

Secondly, it won’t heat up your house! If you want to do some baking but it’s impossibly hot outside, firing up the oven can bring too much heat into both your kitchen and your whole house. In these situations, your Instant Pot will be your best friend!

How to make ahead and store

Brownies can last up to 2 weeks in the refrigerator when stored in an airtight container, and this method is ideal for maintaining their soft texture. Brownies can also be frozen for up to 3 months for long-term storage. To prevent freezer burn, wrap them tightly in plastic wrap or aluminum foil before placing them in a freezer-safe container. For best results, let frozen brownies thaw at room temperature before reheating or serving.

Serving Suggestions

You can never go wrong with a big scoop of ice cream with fresh-out-the-oven brownies. My favorites are this Ice Cream with Chocolate and Pomegranate, this Cottage Cheese Ice Cream, or some Frozen Yogurt.

To make these brownies festive during the colder seasons, consider decorating them with this Peppermint Bark and serving them with a scoop of Coconut Milk Ice Cream with Rum and “Egg nog”!

Instant Pot Brownies

Ingredients

  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 cup avocado oil or any neutral-flavored oil
  • 2/3 cup sugar
  • 1/2 cup (83g) all-purpose flour
  • 1/3 cup (27g) cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/4 cup mini chocolate chips

Instructions

  • Line a 7×3-inch cake pan with parchment paper and rub the sides with oil or spray with cooking oil.
  • In a medium bowl, use an electric hand mixer to beat the egg, egg yolk, vanilla, oil, and sugar until it lightens in color, about 1 to 2 minutes.
  • Gently fold in all the remaining ingredients until well combined.
  • Pour batter into the pan and smooth the top with a spoon or spatula.
  • Pour 1 1/2 cups of water into your Instant Pot and place a trivet inside. Cover the brownie pan with tinfoil very tightly. You don't want any water to get inside.
  • Place the pan in the Instant Pot and put on the lid (make sure it's set to 'Sealing') and cook for 47 minutes. Then let the brownies sit in the pot for 10 minutes before doing an instant steam release.
  • After 10 minutes, remove the pan from the Instant Pot and immediately place the brownies into the refrigerator for 15 minutes.
  • After 15 minutes, remove the brownies from the refrigerator and let cool on the counter completely before slicing.

    I dont have a pan to put into instant pot, but want fudgy brownies. Could this recipe bake in oven normally? If so temp & time suggestions?
