When the weather warms up, I’m always on the lookout for frozen treats to keep me cool and satisfy my cravings for sweets. I must confess that I have a slight addiction to coffee frappés and pistachio ice cream from a fancy Italian coffee shop in my neighborhood, but sometimes I just want something that’s not only a little more affordable but healthy, too! As a child, I always loved popsicles. They’re fun to make and even more fun to eat—which brought me to the idea of creating this delicious recipe for mango popsicles.

And see here the results! These mango popsicles have all that goodness of a decadent frozen treat and only call for three simple ingredients you probably already have on hand. They’re SO unbelievably easy to make and taste creamy, cool and refreshing as well! Freeze up a batch, and your crew will thank you! 

Are Mango Popsicles Healthy?

They’re relatively low in fat and calories and definitely much healthier than most frozen desserts you can get at the store. Plus, mangos are a good source of fiber, vitamins, and minerals. To slightly lower the fat content, you can use low-fat coconut milk or a good-quality soy milk. An all-natural replacement for the honey or agave would be date syrup.

The Beauty of Frozen Fruits And Vegetables

While fresh, local produce is always best, there’s absolutely nothing wrong with reaching for frozen produce in this and other recipes. Frozen fruits and vegetables are not only affordable (you can even buy them in bulk!), but they also offer great convenience. With a freezer stocked with fruits and vegetables, you can always whip up a quick and healthy meal. In fact, did you know that frozen produce may even contain more nutrients than fresh? This is because it’s frozen at peak ripeness, locking in nutrients, whereas fresh produce often sits in transport or on supermarket shelves, losing some of its nutritional value over time.

Additionally, having frozen fruits and vegetables on hand encourages us to incorporate them into our meals more frequently (a very good thing!) and helps reduce food waste. No more tossing out produce because we forgot to use it in time!

That said, while this recipe calls for frozen mango, you can always replace it with fresh if you prefer.

How To Make Ahead and Store

The popsicles will take about 4 hours to freeze completely. To avoid freezer burn, once frozen, lift the popsicles out of the mold and wrap them in parchment paper before popping them into Ziploc bags. They will keep well in the freezer for up to 6 months.

Serving Suggestions

Popsicles are great as a treat on a scorching summer day, but they can also round off an alfresco summer meal beautifully. Why not organize an impromptu summer evening feast full of color and flavor with a group of friends tonight? This vibrant Strawberry-Chicken Salad is both beautiful and refreshing. Pasta-based salads, such as this Vegan Gluten-Free Pasta Salad With Artichoke And Lemon Vinaigrette, are always a great option. Crispy-Skin Salmon would make a lovely main, if presented on a platter of fresh greens, herbs, and lemon slices.

Mango Popsicles

Ingredients

  • 1 1/2 cups frozen mango chunks thawed
  • 9 tablespoons full-fat coconut milk
  • 1 1/2 tablespoons honey or agave

Instructions

  • Place all the ingredients into a high-powered blender and blend until smooth and creamy.
  • Pour into silicone popsicle molds (leaving a little room at the top) and place in the sticks.
  • Freeze until set, about 4 hours.
  • To remove, run some warm water over the molds and lift out the popsicles
  • EAT!
