Though I have no trouble getting out of bed as soon as that alarm clock goes off, I am certainly not a morning person. Nine times out of ten, I’m rushed and racing out the door after burning my mouth with a few quick swigs of coffee while scrambling in my purse for my car keys. Breakfast? If I am organized enough, it’s probably a smoothie made the night before and waiting for me in a thermos in the fridge or muffins I baked that week. Rush hour traffic, I hate to admit, is usually the place where I break my fast. Things have to change.

And thanks to these coffee overnight oats with Greek yogurt, there’s a good chance they will. Why? Because this breakfast is so utterly delicious, that I’ve made a deal with myself to set the clock just a little earlier so that I can take my time and relish every caffeine-infused spoonful of these creamy, toasty oats. This double-duty breakfast tastes like a fancy latte at one of those expensive coffee places but is actually quite healthy, helping me start the morning in a delicious and definitely more relaxed way.

Are Coffee Overnight Oats With Greek Yogurt Healthy?

Full of fiber, vitamins, and minerals, oats are a stellar breakfast that will help you maintain stable blood sugar levels throughout the morning and keep you fuller longer. After an oatmeal breakfast, the chances of mingling with the candy machine during your morning coffee break are highly unlikely. Greek yogurt is a good source of protein, as is soy yogurt, if you’re looking for a dairy-free replacement. If you want an all-natural sweetener, use date syrup.

Jazz Up Those Oats

There are endless ways to mix things up with this recipe to make it your own. If you want to make these overnight oats taste like mocha, add a bit of cocoa powder to the mix. And I wouldn’t discourage you from adding some shavings of good-quality dark chocolate (which happens to have antioxidants). Flavored coffee syrups will add some sugar, but they’ll make these oats just a little more fun and get those coffee shop vibes going strong. You could also add a dash of cinnamon or even pumpkin pie spices.

If you want to keep things as wholesome as possible, stir in a tablespoon of either chia seeds or flax. Topping the oats with fresh fruit (such as bananas or berries) and chopped nuts is also a tasty idea.

Another fantastic fact about overnight oats is that they last longer than just 1 day! These coffee overnight oats will last up to 5 days, so if you make them on a Sunday night, you will have breakfast covered for the entire workweek!

Serving Suggestions

Ingredients

  • 1/2 cup rolled (old-fashioned) oats (gluten-free, if needed)
  • 1/2 cup strong-brewed coffee
  • 1/3 cup non-fat vanilla Greek yogurt (plant-based, if desired)
  • 1/2 teaspoon vanilla extract
  • Sweetener of choice to taste (I used stevia)

Instructions

  • Mix all ingredients in a medium bowl, sweetening to taste.
  • Let the mixture sit in the refrigerator for at least 6 hours or overnight.
  • Plate and serve the next morning with toppings of choice.

    Have quick oaks in the cupboard that I’d like to use is is there a way to substitute quick oats for regular oatmeal? I’d really like to use what I have on hand prior to buying a new box.

      Hi Debby, yes usually quick oats and regular oatmeal are interchangeable. The only issue may be the texture as quick oats tend to be cut in smaller pieces.
