Oatmeal for breakfast is pretty much my morning go-to on busy weekdays. It’s simple, quick, and so satisfying, and you can top it in so many ways. Whether you want something savory, sweet, light, or indulgent, oats are the perfect blank canvas to dress up (or down) to your heart’s content.

And when it comes to choosing what kind of oats to use, I can’t help but prefer steel-cut. Steel-cut oats are dense and chewy, with a slightly nutty flavor that’s delicious all on its own. It’s hard not to prefer them over rolled oats when making oatmeal. But there’s a catch: Steel-cut oats can take 30 minutes or longer to cook on the stovetop. Who has the time? Enter the Instant Pot, the magic machine that delivers perfectly cooked steel-cut oats in 20 minutes. No pot-watching required.

Are Instant-Pot Steel-Cut Oats Healthy?

Absolutely. Steel-cut oats are a nutritious whole grain rich in soluble fiber (namely beta-glucan) that can help lower your “bad” cholesterol (LDL), maintain good gut health, and keep your heart healthy. Paired with a low glycemic index, the fiber in steel-cut oats can help keep you feeling full longer. Steel-cut oats also contain some protein and iron, along with additional minerals like zinc, folate, and selenium. Depending on what you top your bowl of oatmeal with, you can have an incredibly wholesome, nutritious breakfast that delivers the total package.

Why You’ll Love Instant-Pot Steel-Cut Oats

What’s not to love about them? Steel-cut oats are perfect for various diets and are loaded with health benefits. If you are gluten-free, you can find gluten-free certified steel-cut oats at your grocery store. If you’re a picky eater—or you’re feeding a bunch of picky eaters—the sheer variety of toppings and ways to customize steel-cut oats means you’ll never run out of options. Choose from nut or seed butters, whole nuts or seeds, sliced fruits, dried fruits, jam, granola, honey, maple syrup, yogurt, herbs, sunny-side-up eggs, and so much more. And since you aren’t likely to get bored eating the same thing over and over again, you can make a big batch of plain Instant-Pot steel-cut oats ahead of time and customize them on the day of, making them perfect for meal prepping.

How to Make Ahead And Store

After letting your oats cool to room temperature, you can store leftovers in glass or plastic containers with tight-fitting lids. If you’re planning on freezing your cooked steel-cut oats, make sure you leave enough room for your oats to expand. Steel-cut oats will stay fresh in the refrigerator for up to 5 days and in the freezer for up to 3 months. To reheat, put oats either in the microwave or in a pan on the stovetop. If your oats are dried out, add a little milk or water to help bring back the creamy consistency.
