But could these two really pair up? Could cottage cheese add a dash of something special to my everyday scrambled eggs? The answer is a BIG yes! The cottage cheese turns the scramble into a fluffy morning delight that has featured in my brunches and other morning meals ever since.

Absolutely. Both the eggs and the cottage cheese are loaded with protein—ideal for muscle building and recovery. Cottage cheese also contains essential nutrients like calcium, phosphorous, and potassium, while eggs are rich in B vitamins, folate, and choline. The olive oil is another healthy choice, as it’s rich in heart-healthy monounsaturated fats. Overall, this is a very healthy dish to add to your recipe rotation. It’s also keto, Paleo, gluten-free, and Whole30-friendly.

Getting That Perfect Scramble

Scrambling eggs requires a little more thought than simply stirring the eggs up in a pan. To get the best possible result, I first recommend using farm-fresh or pasture-raised eggs if possible, which have an optimal flavor. You want to make sure you’re scrambling the eggs over a consistent gentle heat that doesn’t cook them too fast, and you should whisk as much air into them as possible so they get nice and fluffy. Finally, wait until your eggs are just about done before adding salt. Salt can draw out moisture and make your eggs runny.

How To Make Ahead And Store

Your leftover scrambled eggs will last in the fridge for around 3 days. When you’re ready to eat them, warm them up gently in the microwave or on the stove. Just be sure you keep that temperature low; cranking up the heat will toughen your eggs.

Ingredients

  • 4 fresh eggs
  • 1/2 cup cottage cheese
  • 1 teaspoon olive oil
  • Salt and pepper

Instructions

  • In a large bowl, crack in the eggs and add the cottage cheese. Whisk until blended.
  • Heat the olive oil in a nonstick pan over medium heat. Add the whisked eggs.
  • Use a spatula to gently push the eggs into the center of the pan. Continue until they are mostly cooked but still slightly runny in places. This should take 3-5 minutes.
  • Season with salt and pepper, and serve.
