Saturday night is date night at our house, and while I love exploring the new restaurants popping up around town, this night is special. I see it as my chance to create something truly memorable. The excitement already begins on Friday evening when I dive into my cookbook collection on a delicious quest for the perfect meal. What will I serve as an appetizer? Or should I skip the appetizer and just go for a charcuterie board and a glass of sparkling wine? And what about the main? Will it be a perfectly grilled rib-eye steak with pepper-cream sauce? Or should I finally tackle that homemade pasta recipe I’ve been eyeing for ages, even though it’s a bit finicky?

One thing I know for sure is that a simple green salad will always make an appearance, either as a side or paired with a cheese course before dessert—an elegant French tradition I picked up from friends in Paris and happily adopted. Nothing fancy, just a few handfuls of crisp, mixed greens thoughtfully arranged on a beautiful platter. Perhaps a scattering of toasted, chopped almonds for a little crunch.

Because of the salad’s unpretentiousness, it demands a dressing that will elegantly complement it with just the right amount of zest—something light yet flavorful and sophisticated. And that’s why I created this vibrant Whole30 salad dressing that merges the delicate sweetness of balsamic vinegar with Dijon mustard, garlic, and olive oil. Simple, straightforward ingredients that enhance rather than overpower. It’s become a favorite at our house, and I’m convinced it’ll become a favorite at yours, too.

Is This Whole30 Salad Dressing Healthy?

Absolutely, especially if you compare it to store-bought varieties, which often tend to have a long list of ingredients along with excess fat, salt, and sugar. When making this dressing, you can always leave out the salt, and it will taste just as delicious.

What is Whole30?

Whole30, as the name suggests, is a 30-day eating program designed to transform our health while reprogramming our approach to food and helping us adopt a healthier, more natural way of eating. During the program, which can be followed by those on a plant-based diet, the focus is on clean, healthy foods while omitting items such as alcohol, sugar, dairy, and processed foods. Endorsed by doctors and praised by many for its effectiveness, it’s not only ideal for those who want to shed excess weight, but also for those who seek to improve their overall well-being and establish a more mindful relationship with food.

How to Make Ahead and Store

Because it calls for fresh garlic, this dressing is best used right away. It can be stored in the fridge for up to 3 days, but bear in mind that the flavors will get a lot stronger.

Serving Suggestions

If you’re looking to dress up more than just a variety of mixed greens, this punchy dressing goes especially well over this Grilled Zucchini And Green Bean Salad. It will also beautifully complement the tangy flavors in this Pomegranate Persimmon Salad. As mentioned above, it can be used as a marinade or finishing touch for vegetables, too. Try it as a marinade for this Pan-Seared Chicken Breast, or drizzle over Air-Fryer Asparagus.

Whole30 Salad Dressing

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon crushed garlic
  • 11 tablespoons extra virgin olive oil
  • Salt to taste

Instructions

  • Whisk together the balsamic vinegar, Dijon mustard and garlic in a medium bowl.
  • While whisking vigorously, slowly pour in the oil until the mixture emulsifies.
  • Season to taste with salt.
  • Pour on everything!

    Fresh garlic or garlic salt, powder?

      I prefer using fresh garlic but you can also use garlic powder if you easier.
