This Carrot Cake Oatmeal is like a piece of cake, but in healthy breakfast form!

Let’s talk about healthy breakfasts! If you’re like me, you LOVE a delicious breakfast, but you also want it to be something nourishing, filling, AND delicious. I mean, is that too much to ask? Here at FFF, that’s a resounding NO! There are SO many healthy breakfast ideas to choose from around here, but oatmeal tops the list. And rightly so! Oats are so incredibly versatile, and in a way, they remind me of my childhood. It was one of the standard breakfasts my mom made while we were growing up. Though truth be told, hers was a lot more basic. Just oats cooked in milk with some cinnamon and brown sugar, and off to school we went!
Today’s recipe, however, brings all the best of carrot cake and combines it with oatmeal to make a dessert-in-a-bowl type of breakfast that you will LOVE! It’s made with better-for-you ingredients and is downright delicious. It’s really something worth getting up for!
Is This Carrot Cake Oatmeal Healthy?
When I was developing this carrot cake oatmeal recipe, I wanted to be sure that I made a delicious recipe that was also healthy. This oatmeal contains pineapple, raisins, AND coconut—fruits that are not only high in fiber, vitamins, and minerals, but also provide sweetness. In fact, to make this even healthier, you can omit the brown sugar or replace it with a natural sweetener such as date syrup. This recipe is vegan, but you can replace the almond milk with cow’s milk, if desired.

We all know how incredibly wholesome a bowl of oatmeal is, and if you combine that with the decadence of carrot cake, you’ve got yourself a breakfast that will feel like a naughty treat. What’s also so great about this recipe is its versatility. If you want to jazz up your bowl of carrot cake oatmeal, consider adding some more toppings to make it just how you like it! You could start by swirling in some of your favorite nut butter. I think almond or pecan butter would be absolutely delicious mixed into it! If you want to add a little more crunch to the oatmeal, chop up some more nuts of your choice and sprinkle them on top. Grated apple also adds natural sweetness, and you can always replace the raisins with dried cranberries or even chopped dates!

How To Make Ahead And Store
The oatmeal will stay good in the fridge (if stored in an airtight container) for up to 4 days. When stored, the oatmeal will thicken. Reheat gently on the stove, adding some extra almond milk to loosen the consistency. You can also freeze it in muffin tins for up to 3 months.

Serving Suggestions
You won’t need much to go with these oats, as they’re extremely filling. A cup of coffee or tea and a glass of orange juice should do just fine.

Recipe

Ingredients
- 1 1/4 cups water
- 1/2 cup grated carrot
- 1/2 cup rolled (old-fashioned) oats (GF oats)
- 1/3 cup crushed pineapple
- 2 tablespoons golden raisins
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup unsweetened almond milk
- 2 tablespoons brown sugar
- 1 tablespoon toasted coconut flakes
- 1 tablespoon chopped pecans
Instructions
- Place the water and carrots in a medium saucepan and bring to a simmer over medium heat. Simmer for 2-3 minutes to soften the carrots.
- Stir in the oats, pineapple, raisins, cinnamon, and nutmeg and bring to a boil. Boil for 1 minute, then reduce the heat to medium and simmer until it begins to thicken, about 5 minutes.
- Once most of the liquid is absorbed, stir in the milk and simmer for 1-2 minutes, or until slightly thickened and creamy.
- Remove from heat and stir in the brown sugar, coconut flakes, and pecans.
- DEVOUR!

Yes, you can definitely skip the pineapple. You can adjust the quantity of raisins or replaced with another fruit liked dried cranberrys. Enjoy your customized carrot cake oatmeal 🙂
