“I love eggs, from my head down to my legs!” Growing up back in the 90s, I remember that commercial with a guy dancing in front of a diner and people eating all kinds of delicious egg dishes. For some reason, I always saw it on Saturday morning while watching cartoons and would proceed to call out to my mom: “MOM, can we have eggs for breakfast?” Scrambled, fried sunny-side up or over-easy, soft-boiled or hard-boiled, elegantly served as an omelette or eggs Benedict, and used in myriad recipes, “the incredible edible egg” (as the slogan says) is truly the king of the kitchen.

But if you ask me, there’s nothing quite like the simplicity of a perfectly soft-boiled egg, with its golden yolk beautifully runny and the whites just set. All they need is some sea salt flakes and perhaps some toast. Plus, you can add them to salads and soups. Which is why you’re going to be obsessed with today’s insanely easy and delicious recipe. That’s right, this post is all about showing you how to cook a soft-boiled egg in the microwave. No stovetop, no waiting for water to boil. The microwave is going to do ALL the work this time, and these eggs will have you singing their praises, just like in that old-school commercial!

Are Soft-Boiled Eggs Healthy?

In short, yes, eggs are good for you! They’re low in calories and rich in nutrients such as vitamin D, B12, choline, and iodine. Eggs are also high in protein and omega-3 fatty acids. Some studies have shown that consuming one egg a day is safe for most healthy individuals and that although eggs contain cholesterol, it does not negatively impact the cholesterol in the blood. Of course, it also very much depends on how you prepare them. A soft-boiled egg with a piece of whole-wheat toast is a healthy way to start your day. That’s a different story if you’re indulging in scrambled eggs made with plenty of butter or eggs Benedict served on brioche and doused with a rich hollandaise sauce!

Can You Really Cook Eggs In The Microwave?

Yes, you can definitely make soft-boiled eggs in the microwave, as long as you use a microwave-safe dish. Although it might seem risky, it’s actually quite simple and safe! To prevent the eggs from cracking during cooking, resting, or cooling, it’s important to add salt and a pinch of baking soda to the water. I also recommend  piercing the wide end of the egg with a pin or a needle.

Using a deep, small bowl is ideal for this method. It ensures the eggs are fully submerged in water, allowing them to cook evenly. The cooking time may vary slightly based on your elevation and microwave power, so if three minutes doesn’t produce the perfect result, adjust by adding or subtracting ten seconds. Lastly, don’t forget the ice bath—letting the eggs sit in cold water for two minutes stops the cooking process and guarantees the perfect texture for soft-boiled eggs.

How To Make Ahead And Store

Soft-boiled eggs will stay good in the fridge for up to 2 days. Make sure to cool them down quickly in an ice bath before placing them in an airtight container or Ziploc bag. To reheat them, simply place them in a bowl of hot water for 2 minutes. Freezing is not recommended, as this will ruin their texture.

Serving Suggestions

Whether enjoyed alone or with some toast, soft-boiled eggs are a real treat. You can also add them to a Caesar Salad or slice them in half and serve them atop a bowl of Soba Noodles. And it almost goes without saying that a soft-boiled egg is a perfect match with some Avocado Toast! Speaking of toast, another excellent idea is to toast a thick slice of sourdough, rub it with garlic while still warm, brush it with good olive oil, top it with Sautéed Mushrooms, and crown it with a beautiful soft-boiled egg!

Soft-Boiled Eggs in Microwave

Ingredients

  • 2 large eggs room temperature
  • 1 tsp salt
  • Pinch of baking soda

Instructions

  • Fill a deep, microwave-safe bowl with enough water to cover the eggs. Heat the water in the microwave until very hot, about 3 minutes.
  • Mix in the salt (add 1/2 tsp salt per egg, so if you are cooking more eggs, add more salt) and just a pinch of baking soda and stir. Gently slide the eggs into the bowl.
  • Microwave for 3 minutes. Then, let stand in the water for 6 minutes. Note that my microwave is a 1000W. You mat need to adjust time depending on your microwave strength.
  • Fill a bowl with ice and cold water and slide the eggs in, letting them stand for 2 minutes.
  • Peel and eat!

Tips & Notes:

You may need to play with cook time based on the size of your bowl and microwave power but this cook time consistently worked well for me. My bowl was short but deep!

    I went terribly wrong somewhere, I even gave it an extra 20 seconds bc I prefer more done. And I have a next to raw egg.. I live in the pacific nw at a low elevation and have a brand new GE microwave. lol. I think I’ll have to stick with the stove for my soft boiled eggs.
