I drive a lot, but I’m one of those oddballs who enjoys a long drive. Multiple times a year, I drive across the country for work and play, and I wouldn’t change it for anything. But the one thing that annoys me on a long drive is the fact that I can’t easily eat a salad on the go—and trust me, I have tried. It’s messy.

Where do I put the container so that it doesn’t spill when I make a turn? How do I open a dressing packet one-handed? How do I make sure my fork was going in the right place while still watching the road? So many problems with no great solutions. Salads are, unfortunately, a two-handed affair, and though I’m not against stopping the car to eat lunch at a table like a civilized person, I often don’t want to stop my podcast long enough to do so.

Let me introduce the solution to my salad-in-the-car problem: the chicken Caesar wrap. It’s a salad inside a tortilla, with no fork required! Yes, there are fast-food chains that sell items like this, but homemade is always better. Making this wrap yourself is easy and affordable, and it puts you in control of how much dressing, croutons, and chicken you end up with. You can’t get that at a drive-thru!

Is This Chicken Caesar Wrap Healthy?

The chicken Caesar wrap has protein and a dose of potassium, thanks to the lean chicken breast. The nutritional downside of this recipe is the Caesar dressing, which adds a lot of fat and calories. The Parmesan cheese also contributes to the fat content, but at least it adds some protein!

If you want a healthier chicken Caesar wrap, here are a few suggestions: Use a whole-wheat or low-carb tortilla instead of a regular white flour tortilla, and make your own Healthy Caesar Dressing. To make this dish gluten-free, you’ll need to use a gluten-free tortilla and find some gluten-free croutons (or omit the croutons).

Cooking The Chicken

You’ll notice that this recipe calls for “cooked” chicken breast and doesn’t explain how you should cook it. Why? Because there’s more than one way to cook chicken breast! Here are a few ways I end up with shredded chicken breast for chicken Caesar wraps.

  • You can opt for a very healthy method that doesn’t add any oil, like boiled or Poached Chicken.
  • You can air fry the chicken with a little bit of oil and light seasonings (like this Herby Air-Fryer Chicken Breast recipe), which adds a lot of flavor and texture compared to boiling or poaching.
  • You can cook the chicken over high heat on the stove for a quick and juicy result, like this Pan-Seared Chicken Breast.
  • You could use leftover chicken breast from a previous dinner, like this Slow-Cooker Italian Chicken With Zucchini Noodles.
  • The usual reason I have cooked chicken breast in my fridge is because I have leftover rotisserie chicken. It involves no work, and it makes a great chicken Caesar wrap!

How Do I Store Leftovers?

These wraps are best shortly after they’re assembled. If you end up with leftover wraps, keep them refrigerated in an airtight container and consume them within a day or 2; longer storage will result in soggy lettuce and tortillas. And definitely don’t freeze assembled wraps, for the same reason!

Serving Suggestions

This wrap is a meal all rolled up into one tortilla! But you can also serve it with a light side, like an orange, a sliced apple, or even a Fruit Salad. For something a little different on the side, try this delicious Apple Coleslaw.

If you aren’t making these for a road trip lunch to eat while driving, like I tend to do, you might consider using small tortillas and making mini-wraps for a group luncheon. In that scenario, I would definitely serve these with heartier sides, such as Coconut Rice or even Spanish Rice With Ground Beef. I think these would also go great with this Grilled Vegetable Salad With Balsamic Vinaigrette.

Ingredients

  • 4 cups romaine lettuce chopped
  • 2 cups cooked chicken breast shredded
  • ½ cup Caesar dressing
  • ½ cup croutons
  • ¼ cup Parmesan cheese grated
  • 4 large flour tortillas

Instructions

  • In a large mixing bowl, combine the chopped romaine lettuce, shredded chicken, Caesar dressing, croutons, and grated Parmesan cheese. Toss well to ensure all ingredients are evenly coated with the dressing.

  • Warm the flour tortillas in a skillet over medium heat for about 30 seconds on each side, or until they are pliable. This makes them easier to wrap without tearing.

  • Divide the salad mixture among the tortillas, placing it in the center of each. Fold in the sides of the tortillas and roll each one tightly to secure the filling. Serve immediately.
