I can still enjoy the special flavor of fried spring rolls without hurting my wallet. They’re flaky, crispy, and delightfully good. They’re vegan-friendly, too.

Vermicelli noodles are thin, delicate rice noodles that are a staple in many Asian cuisines, particularly in Vietnamese and Chinese dishes. Made from rice flour and water, these noodles have a subtle, chewy texture that pairs well with a variety of flavors. They are often used in stir-fry meals, soups, and salads and can be served either warm or cold. Their versatility and ability to absorb flavors make them a beloved choice! How Do I Store Leftovers?

Store leftovers in the fridge in an airtight container for 4 days. Fried spring rolls freeze super well, so you can keep on enjoying them post-fry. Simply store your fried spring rolls in a freezer-safe, airtight container, ensuring the rolls are not touching each other by using parchment paper. You can enjoy them for up to 4 months. To reheat, bake at 325°F for 10 minutes. That said, spring rolls taste best when they’re freshly made.

Ingredients

  • 1 cup shredded cabbage
  • 1 medium carrot julienned
  • 1/2 cup thinly sliced bell pepper
  • 1/4 cup finely chopped green onions
  • 1 teaspoon soy sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup cooked vermicelli noodles
  • 12 spring roll wrappers
  • Vegetable oil for frying

Instructions

  • Prepare the filling by combining cabbage, carrot, bell pepper, green onions, soy sauce, black pepper, and salt in a bowl. Mix well.

  • Add cooked vermicelli noodles to the vegetable mixture and toss to combine.
