These truffles are the ultimate indulgence. Their velvety smooth texture, thanks to the combination of ripe avocado and melted chocolate, pairs beautifully with the subtle acidity of the champagne, creating a treat that’s both decadent and refined. They’re more than just a way to use up leftovers—they’re an elegant dessert or a thoughtful edible gift for birthdays, Valentine’s Day, or any occasion that deserves a little sparkle!

Are These Avocado Vegan Chocolate Truffles Healthy?

These truffles are completely sugar-free (the agave is optional) and made without any butter or oils. They get their creaminess from avocado, which is a source of healthy fats, fiber, vitamins, and minerals. Plus, the dark chocolate is a source of antioxidants. Low in calories and saturated fat, these truffles can definitely be part of a healthy diet. However, bear in mind that they do contain alcohol, so they’re not suitable for children or those avoiding alcohol. In that case, try a non-alcoholic champagne (there are plenty of great options to choose from!) or replace the champagne with tonic.

Vegan Champagne?

You may be wondering what the heck “vegan” champagne is. After all, champagne isn’t an animal product, right? Well, you might be surprised to learn that the vast majority of champagnes (and wines, for that matter) aren’t vegan because they use animal-derived products during the clarification process.

Clarification (also referred to as ‘fining’) is a step in winemaking that removes particles and impurities to create a clearer, more appealing final product. Traditionally, animal-derived substances such as egg whites, casein, isinglass (fish bladder), or gelatin are used. These agents bind to unwanted particles, which are then filtered out, leaving the wine or champagne clear. Vegan-friendly champagnes, on the other hand, are clarified with agents like bentonite clay or activated charcoal, which achieve the same clarity without the use of animal products. So, if you’re aiming for a completely plant-based treat, checking for vegan champagne is an important detail!

How To Make Ahead And Store

To prep ahead, the mixture can be left in the fridge overnight and rolled into balls the next day. Once made, the truffles can be stored in the fridge in an airtight container for up to 4 days. Freezing is not recommended, as the texture will be compromised upon thawing.

Ingredients

  • 1 1/3 cups avocado mashed (300 grams) about 2 large avocados
  • 3/4 cup unsweetened cacao powder plus additional for rolling
  • 3/4 cup extra-dry champagne (make sure it’s vegan!)
  • 1 tablespoon agave optional, omit if you like rich chocolate taste
  • Pinch of sea salt
  • 8 ounces dark chocolate dairy-free

Instructions

  • Add the mashed avocado and cacao powder into a large food processor and blend until smooth and combined, stopping to scrape down the sides as necessary.

  • Add in the champagne, agave (if using), and a pinch of salt. Blend until smooth and combined.
  • Place the dark chocolate in a microwave-safe bowl. Heat using half power and 30-second cooking intervals, stirring between each interval, until smooth and melted.
  • Add the melted chocolate into the food processor with the other ingredients and blend until smooth and combined, scraping down the sides as necessary.
  • Scrape the mixture into a medium bowl, spreading out evenly. Cover and refrigerate until set, about 2 hours or overnight.
  • Line a baking sheet with parchment paper and fill a shallow plate with extra cacao powder. Scoop out some of the mixture using a tablespoon and roll into balls. Roll through the cacao and place onto the prepared pan. Devour!

Tips & Notes:

Do not roll them in sprinkles like in the photo, as the sprinkles do melt.
*Truffles will be a little soft, so your hands will get a little messy, but it’s worth it!
Store truffles in the refrigerator if not serving right away.
