I love anything sweet, such as candy, ice cream, desserts, and pastries. There is never a time when I won’t, at the very least, try something sweet. And this is exactly how I tried chocolate truffles for the first time.

I had often heard about chocolate truffles, but never had the opportunity to try them until one of my cousins got married. At her wedding, during the dessert course, a tiered cake was brought out with a little bride and groom on top. And surrounding the cake on the dessert table were little cocoa-dusted chocolate truffles! As soon as I bit into one, I fell in love. So sweet and rich, yet delicate and easy enough to eat with just one or two bites. I knew immediately that I had to learn how to make these sweet treats for myself.

These chocolate truffles are velvety in texture and decadent in flavor. They combine the intense taste of 70% dark chocolate with a creamy ganache base, making each bite a celebration of pure chocolate bliss. Perfect for celebrations, gifting, or indulging yourself, this recipe is a classic crowd-pleaser.

Whether you’re following a gluten-free or vegetarian diet, this recipe checks all the boxes. With just a few adjustments, you can also adapt it to fit vegan or dairy-free diets.

Are These Chocolate Truffles Healthy?

Well, it depends on your definition of healthy! Dark chocolate offers a good dose of antioxidants and contains less sugar than milk chocolate, making it a smarter choice for a sweet treat. However, heavy cream and butter add richness but also bring calories and fat, so portion control is key.

Those who are lactose intolerant or vegan can replace the heavy cream and butter with plant-based alternatives. Coating the truffles in unsweetened cocoa powder instead of melted chocolate or crushed nuts can reduce calories. Moderation is the magic word when enjoying these delicious bites!

What Is Ganache?

Ganache is the heart and soul of a chocolate truffle. It’s a rich emulsion made by blending melted chocolate with warm cream, creating a silky mixture that can be used in a variety of desserts. The density and consistency of ganache depend on the ratio of chocolate to cream. For truffles, we use a higher ratio of chocolate to create a dense, semi-solid ganache that can be shaped into bite-sized pieces.

The flavor of ganache is deeply influenced by the chocolate you choose. For this recipe, dark chocolate with 70% cocoa is the star, providing an intense, slightly bittersweet flavor. Ganache may sound fancy, but its simplicity and versatility make it a must-know technique for any chocolate lover.

How To Make Ahead And Store

Store truffles in an airtight container in the refrigerator for up to 2 weeks. If freezing, place them on a parchment-lined tray to harden, then transfer to a freezer-safe bag or container for up to 2 months. Thaw in the refrigerator overnight and bring to room temperature before serving for the best flavor and texture.

As I’ve said before, chocolate truffles are the perfect dessert or sweet treat for any party. I recommend serving them with coffee, tea, or perhaps a Strawberry Milkshake for the younger guests. If you want even more intense chocolate flavors to go with your truffles, then perhaps try a Vegan Hot Chocolate instead.

I also like to make chocolate-themed dessert boxes for my friends and family around the holidays. Pair these chocolate truffles with some Salted Chocolate Brownie Bites, a few mini loaves of this Chocolate Banana Bread, and a bagful of these Chocolate-Covered Pretzels.

Ingredients

  • 8 ounces 70% cocoa dark chocolate finely chopped
  • 2/3 cup heavy cream
  • 1 tablespoon unsalted butter at room temperature
  • 1/2 teaspoon pure vanilla extract
  • Unsweetened cocoa powder for serving, optional
  • Crushed nuts for serving, optional
  • Melted chocolate for serving, optional

Instructions

  • Place dark chocolate in a heat-proof bowl.

  • Heat heavy cream in a small saucepan over medium heat until it begins to gently simmer, then pour over the chocolate.

  • Let the mixture sit for 5 minutes without stirring. Then, add butter and vanilla extract, and stir until smooth.

  • Cover the mixture with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill in the refrigerator for 1 to 2 hours, or until firm.
  • Once chilled, use a spoon or melon baller to scoop out portions of the truffle mixture. Roll into balls with your hands.

  • Roll the truffles in your choice of toppings such as cocoa powder, crushed nuts, or melted chocolate until evenly coated.
  • Place the coated truffles on a parchment-lined tray and chill until set. Serve at room temperature for the best flavor and texture.
