115-ounce can chickpeas, drained and rinsed
1/2red onionchopped
1/2cupfresh parsleychopped
1/2cupfresh cilantrochopped
2clovesgarlicminced
1teaspoonground cumin
1teaspoonground coriander
1/4teaspooncayenne pepperoptional
1/2teaspoonsalt
1/4cupchickpea flour
Whole-wheat burger buns
Lettucetomato, cucumber slices for serving
Instructions
Preheat the oven to 375°F. Line a baking sheet with parchment paper.
In a food processor, combine chickpeas, red onion, parsley, cilantro, garlic, cumin, coriander, cayenne pepper, and salt. Pulse until mixture is coarsely ground.
Transfer the mixture to a bowl, add chickpea flour, and mix until well combined. Form the mixture into 4 patties and place them on the prepared baking sheet.
Bake in the preheated oven for 15 minutes, then flip the patties and bake for an additional 15 minutes or until golden and firm.
Serve the falafel burgers on whole-wheat buns with lettuce, tomato, and cucumber slices.
