Ingredients

  • 2 Persian cucumbers diced
  • 1/4 cup pepperoncini sliced (optional)
  • 1 small bell pepper diced (any color)
  • 2 medium tomatoes diced
  • 1/2 cup red onion diced
  • 2/3 cup Kalamata olives halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1/2 teaspoon dried basil
  • 1 1/4 teaspoons dried oregano
  • Salt to taste

Instructions

  • Combine all chopped ingredients in a large salad bowl.
  • Crumble feta cheese over the chopped vegetables.
  • In a small bowl, whisk together olive oil, red wine vinegar, dried basil, dried oregano, and salt.
  • Pour the dressing over the salad and toss gently to combine. Adjust salt if needed.
